Abstract:Baru fruits were manually collected after natural falling in the municipality of Campo Grande, MS, transported to the Food Technology Unit of UFMS, being manually selected to eliminate spoiled ones and stored in 60-kg raffia bags for 4 months (30 °C ± 1.35; 60% ± 1.66 relative humidity).
