Use Carum copticum essential oil for controlling the Listeria monocytogenes growth in fish model system

Abstract: This study was conducted to evaluate the antibacterial effect of Carum copticum essential oil (Ajowan EO) against Listeria monocytogenes in fish model system. Ajowan EO chemical composition was determined by gas chromatography/mass spectral analysis and the highest concentration of Carum copticum essential oil without any significant changes on sensory properties of kutum fish (Rutilus frisii kutum) was assigned. Then the inhibitory effect of Ajowan EO at different concentrations in presence of salt and smoke … Show more

“…Carum copticum , also known as Ajwain, Ajowan, Trachyspermum ammi L ., or Trachyspermum copticum 6,7 belonging to the family of Apiaceae is an annual herbal plant growing in India, Iran, Pakistan and Egypt. The antimicrobial activity of C. copticum essential oil (EO) has been studied in vitro 8 as well as in food products and food model system 9,10 . C. copticum EO showed different potentials to inhibit the growth of Gram‐negative and Gram‐positive food‐borne pathogenic and spoilage bacteria 11 .…”

“…Similar studies screened the antibacterial properties of essential oils such as T. ammi against bacteria. One study evaluated T. ammi essential oil for controlling the Listeria monocytogenes infection in fish [27], and another investigated the inhibitory effect of this oil on E. coli, Klebsiella, and Staphylococcus bacteria. Based on their findings, T. ammi essential oil had antibacterial effects against human pathogens, similar to our results [2].…”
