Action of peracetic acid on Escherichia coli and Staphylococcus aureus in suspension or settled on stainless steel surfaces

Abstract: The efficiency of a commercial peracetic acid sanitizer on destruction of Staphylococcus aureus and Escherichia coli was evaluated using two distinct methods. The first method is the AOAC suspension test and the second is a method proposed by one of the authors in which the microbial cells are settled on a stainless steel surface and then treated with the sanitizer. The results showed that when in suspension S. aureus was more resistant to the sanitizer than E. coli. When S. aureus was settled on the stainless… Show more

“…After contamination, two specimens were transferred aseptically to tubes containing 8 mL sterile water with peracetic acid neutralizing solution (sodium thiosulfate, Na 2 S 2 O 3 , VETEC, 2 g/L, Kunigk and Almeida 6 ) and glass beads. The solution was mixed for 1 min using a Vortex (Vortex-Phoenix, Araraquara, Brazil).…”

“…Peracetic acid has the advantages of remaining effective even in the presence of organic residues, and it decomposes into nontoxic and nonmutagenic substances (acetic acid and oxygen) and provides excellent disi n fect ion i n a short per iod. 6,7,8 Parameters for the correct use of peracetic acid in disinfection procedures should thus be defined. We therefore assessed the antimicrobial effectiveness, the physical stability, and corrosiveness of two different commercial formulations of peracetic acid in a simulated final disinfection process using stainless steel specimens.…”

“…This substance works quickly and is effective against bacteria, fungi, viruses and spores. 12,13 Unlike most chemical disinfectants, it is not inactivated in the presence of organic material, 12,14 does not leave residues and does not produce byproducts harmful to the environment, because its mechanism of action involves the release of free oxygen and hydroxyl radicals decomposing in oxygen, water and acetic acid. 12,13,14,15 It can be utilized over a broad temperature spectrum (0 to 40°C), with hard water, and is effective in the 3.0 to 7.5 pH range.…”
