Screening of native yeast from Agave duranguensis fermentation for isoamyl acetate production

Abstract: In this work, fifty yeast strains, isolated from the spontaneous alcoholic fermentation of Agave duranguensis to produce mezcal, were tested using the double coupling system. These yeasts were from the genera Pichia, Torulaspora, Saccharomyces, Kluyveromyces, Deckera, Hanseniaspora, and Candida. P. fermentans ITD00165 was the best isoamyl acetate producer, yielding 0.38 g/L of ester after incubation for 24 h, while K. marxianus ITD00211 produced 0.32 g/L of ester. Thus P. fermentans ITD00165 could be considere… Show more

“…The presence of free amino acids in the fermentative midst provides the yeast with less synthesis of these compounds, effectively contributing in cell viability resulting in greater fermentative efficiency (GUTIÉRREZ-RIVERA et al, 2015). The same yeast may have different fermentative performances, in relation to the composition of the substrate during the fermentation process (HERNÁNDEZ-CARBAJAL et al, 2013).…”

“…• Problem Tree: This is a methodology used to deepen the understanding of a specific problem identified during discussions and diagnostic activities carried out previously with a certain group (SILVA et al, 2013). Thus, a particular problem identified as a key is chosen and the causes and effects arising from that problem are discussed.…”

“…• Reality/Desire: It is a methodology used to guide the planning process in order to deepen the aspects that interfere in the lives of the people in the group involved in the intervention, whether positive or negative (SILVA et al, 2013). Based on the characterization of reality, the group's desire is discussed, that is, where it is intended to reach, with respect to a certain aspect of the life/dynamics of this group.…”

“…According to Souza and Monteiro (2010), in the process of ethanolic fermentation other compounds are produced in addition to ethanol, such as glycerol, organic acids, acetaldehyde, acetoin, butylene glycol that can be used in different industrial processes. The advantages of using yeasts range from cultivation to employment in different industrial sectors, composing a source of research for biotechnological processes (HERNÁNDEZ-CARBAJAL et al, 2013).…”
