Abstract: A tecnologia empregada na agricultura orgânica e no processamento pós-colheita vem desenvolvendo um padrão produtivo bastante distinto à agricultura "moderna". O desejo do consumidor de adquirir um alimento que não venha causar risco a sua saúde foi alterando o mercado, e o produto orgânico passa a ser preferido e mais valorizado por um segmento da população.
