Occurrence of Listeria monocytogenes in salami

Abstract: Eighty-one samples of four different types of salami (Friolan, Hamburguese, Italian and Milanese), belonging to five brands, and purchased at Rio de Janeiro market, were evaluated for the occurrence of Listeria monocytogenes. The pathogen was detected in 13.3% of Italian type samples of salami, while L. innocua occurred in 6.5% of the Italian type and in 16.6% of the Milanese type. The remaining samples were negative for Listeria spp.

“…In Brazil, a study from Borges, Siqueira, Bittencourt, Vanetti, and Gomide (1999) was conducted to assess four types of salami from different commercial brands, and L. monocytogenes was found in 13.3% of the samples. The authors note that for this type of product, the incidence of positives may vary from 5.0% to 23.0%.…”

“…In Brazil, L. monocytogenes has been isolated from dairy products, sausages, salami, chicken, shrimp and animal carcasses 13,14,15,16,17 . In the last two decades, a few studies in Brazil have compared isolates from food, animals and the food processing environment, employing molecular typing methods to find a possible epidemiological relationship between the sources 16,18 , although no study has compared these strains with human isolates.…”
