To preserve life and promote health, it is critical to have access to appropriate quantities of safe food. Foodborne illness is an infectious illness or poisoning caused by viruses, bacteria, or chemicals that contaminate food or water. Food safety and health are the responsibility of everyone, from the agricultural chain to the consumer who comes into touch with food, in order to limit the amount of food poisonings. Nutritionists feel that the home, or the location where the consumer prepares food, is one of the least supervised steps all the way from the farm to the table. Dr. Lotfi Zadeh invented fuzzy logic as a superset of classical logic. This article covers the mathematical foundations of fuzzy logic, as well as membership functions, fuzzy sets, and reasoning rules. Input numbers are converted into linguistic values by fuzzy expert systems, which are subsequently modified by if-then rules provided by a human expert. The notion of a fuzzy expert system is explored in-depth, along with its rule-base and set membership functions.

Although the consumption of fruits and vegetables is being promoted by different institutions as a key question of public health, their consumption is decreasing and their waste is increasing. To address this situation, we propose to include the consumer’s perception of the quality (from a sensory point of view) of a fruit, in particular Valencian oranges, in the supplier’s selection process by retailers. To do so, we use a combination of consumer and trained sensory panels and Analytic Hierarchy Process (AHP). This approach is completely novel in the literature. According to the expert panel, the most important criteria when evaluating the quality of an orange are fruity smell, juiciness, sweetness and acidity. These criteria are related to the freshness and taste of the oranges. Consumers found the methodology proposed useful and easy to develop. The application of the AHP methodology has helped to facilitate a participatory discussion among consumers on the concept of the quality of the oranges. The methodology proposed can help the agrifood sector in different ways up and down the supply chain. Specially, it can contribute to better meet consumer’s demands, increasing the consumption of fruits and vegetables and reducing its waste.

Paper aims: Extending the AHP abilities to new areas from explaining the famous Two-Envelope paradox to finding priorities as functions of auxiliary variables is suggested. Originality:The proposed innovative and advantageous approach permits to find the non-constant priorities via regression modeling for the exponential or Cobb-Douglas production functions. Research method:Transforming the ratio scale into the additive or logarithmic scales, which correspond to the multiplicative utility function, opens new possibilities in the multiple-criteria decision making.Main findings: Two-Envelop problem is resolved, priority vectors are presented as functions by auxiliary variables, preferences are predicted and profiled by predictors. Implications for theory and practice:The suggested techniques open novel possibilities of multiple-criteria decisions helping to researchers and managers to discover useful features of priority behavior due to the demographic, socioeconomic, or technical properties of the compared alternatives, and to find optimal solutions for individual customers.
