ResumenEl modelo industrial de producción de alimentos ha incentivado la emergencia de cadenas agrarias alternativas. Estas suponen modelos de producción fuertemente vinculados al territorio y tienen la finalidad de transitar desde la producción industrial a la captura de valor por medio de sistemas de producción que garanticen la seguridad y soberanía alimentaria. Esta investigación analiza el funcionamiento de la agricultura orgánica en Chile, en tanto producción agraria no convencional, con la finalidad de perfilar su desarrollo como una estrategia de captura de valor y producción de alimentos saludables especialmente para pequeños productores agrarios. Se busca visibilizar modelos de producción que reconectan el flujo de producción-circulación-consumo a través de un mecanismo de gobernanza que posibilite la captura de valor en el territorio.AbstractThe current judgement of the agro-food industrial production has encouraged the emergence of alternative agro-food chains. These involves production models strongly linked to the territory, and that aim to transition from industrial production to capture value through production systems that ensure food security and sovereignty. This research analyzes the performance of organic agriculture in Chile, while unconventional agricultural production, in order to shape its development as a strategy to capture value and healthy food production especially for small farmers in order to visualize models production reconnect the production circulation-consumption through a governance mechanism that enables the capture of value in the territory.
Artigo recebido em 28/09/2011 e aceito em 18/03/2012 RESUMEN:Desde fines de la década del noventa, en Gales, los escándalos alimentarios ("mal de las vacas locas" (EEB) y "fiebre aftosa") han puesto de manifiesto los graves problemas de la comoditización agraria (productos con bajo valor agregado) en un contexto donde la cooperación entre agricultores ha sido históricamente baja y las asimetrías en la cadena de suministro de alimentos deprimían los precios al productor. El fomento de la ganadería orgánica como herramienta de política agraria ha logrado reconectar a productores y consumidores a través de agregar valor a los productos y reducir las distancias espaciales de las cadenas de suministro. Cambrian Foods o Black Mountain Foods son claras experiencias exitosas que utilizan importantes elementos del conocimiento geográfico a través de los mercados de agricultores (farmer markets) y cestas orgánicas (box schemes) para promover cadenas agroalimentarias locales. Sin embargo, continúan predominando las cadenas de distribución globales (Tesco entre otras) orientadas claramente hacia la transacción de comodities desarraigados del territorio. El conocimiento geográfico es una rama en el estudio de la Geografía del consumo, óptica teórica desarrollada por la escuela británica que dice relación con el análisis de las dinámicas espaciales que se generan en la relación producción--circulación-consumo de alimentos agrarios. ABSTRACT:Since the late nineties, in Wales, food scandals (Bovine Spongiform Encephalopathy (BSE) y Foot-andmouth disease (FMD) have highlighted the serious problems of commoditization in a context of low cooperation between farmers and differences in the food supply chain which has depressed producer prices. The support of organic farming as a tool of agricultural policy has reconnected producers and consumers. Cambrian Foods or Black Mountain Foods are success experiences which are using important elements of geographical knowledge through farmer markets and box schemes to promote local food chains. However, continue to dominate the global supply chains (Tesco or Sainsbury´s among others) clearly oriented towards deterritorialized commodities transaction. Geographic knowledge is a branch in the study of Geographies of consumption, approach developed by the British school which is related with the analysis of spatial dynamics that are generated in the production-circulation-consumption of agro-foods.
