This study examined the feasibility of using black rice bran (BRB) as an ingredient of noodles and evaluated the effect of BRB incorporation in noodles in terms of chemical and functional attributes. Noodles were prepared with BRB as an ingredient at different levels (2%, 5%, 10%, and 15%). Addition of BRB (5%, 10%, and 15%) significantly decreased the cohesiveness of noodles in texture evaluation. Noodles with different levels of BRB were functionally evaluated and content of polyphenolics, flavonoids, and anthocyanins were improved compared to the control. Additionally, antioxidant activity of BRB noodles was increased compared to the control. BRB can be an excellent ingredient to increase the nutritional value and antioxidant properties of noodles.
Plant defensins are small (5-10 kDa) basic peptides thought to be an important component of the defense pathway against fungal and/or bacterial pathogens. To understand the role of plant defensins in protecting plants against the brown planthopper, a type of insect herbivore, we isolated the Brassica rapa Defensin 1 (BrD1) gene and introduced it into rice (Oryza sativa L.) to produce stable transgenic plants. The BrD1 protein is homologous to other plant defensins and contains both an N-terminal endoplasmic reticulum signal sequence and a defensin domain, which are highly conserved in all plant defensins. Based on a phylogenetic analysis of the defensin domain of various plant defensins, we established that BrD1 belongs to a distinct subgroup of plant defensins. Relative to the wild type, transgenic rices expressing BrD1 exhibit strong resistance to brown planthopper nymphs and female adults. These results suggest that BrD1 exhibits insecticidal activity, and might be useful for developing cereal crop plants resistant to sap-sucking insects, such as the brown planthopper.
Anmi' is a new BPH (Brown planthopper) resistant japonica rice cultivar possessing the Bph18 gene derived from wild rice, Oryza australiensis and high yield potential with good grain quality. 'Anmi' was derived from a cross 'Junam' and 'IR65482-7-216-1-2' by a molecular marker assisted backcross breeding. The introgression line 'IR65482-7-216-1-2', the source of the Bph18 gene, was used as the donor parent for BPH resistance and 'Junam', a BPH-susceptible elite japonica cultivar with good grain quality, was used as the recurrent parent. 'Anmi' was developed by three times backcross the F1 plants with 'Junam'. The heading date of 'Anmi' is August 15 in central plain area, which is 5 days later than that of 'Hwaseong'. It has 77 cm in culm length, 21 cm in panicle length. The number of spikelets per panicle is more than that of 'Hwaseong' and 1,000 grain-weight of brown rice is 22.1 g which is less than 22.7 g of 'Hwaseong'. Milled rice kernel of 'Anmi' is clear in appearance, low in amylase content and excellent in palatability of cooked rice. 'Anmi' shows resistance to BPH, leaf blast disease, bacterial blight, rice stripe disease but susceptible to other virus disease and insect pest. The milled rice yield performance of 'Anmi' is about 5.76 MT/ha in local adaptability test for three years. This cultivar is adaptable to central plain area of Korea.
In order to study the cooking characteristics of four rice cultivars of Seolhyangchal, Baegjinju, Ilpum and Haiami, we investigated the relationship between the textures of cooked rice and their physicochemical properties. Different levels in grain weight. length/width ratio and amylose content were observed among the four rice cultivars. There was no significant difference in the amylopectin chain length distribution among the cultivars. Water absorptions of rice grains during soaking were completed between 30 and 40 min, with Haiami showing the slowest absorption. Significant differences in the viscosity properties of rice flour were found by a Rapid Visco Analyser. Baegjinju with low amylose content had the highest viscosity in paste breakdown. According to the DSC results of rice starches, there were significant differences in the onset, peak and conclusion temperatures of the endothermic peak. Gelatinization enthalpy showed energy content changes between 4.20 and 6.97 J/g, with the lowest change in Haiami. Texture properties of cooked rice were assessed using a Texture Analyzer, which showed that the hardness of cooked rice was decreased with soaking than without soaking. However, this finding was not applicable for Haiami rice.
The objective of this study was to evaluate quality properties, including amylose, alkali digestion value (ADV), and amylogram, of brown rice and germinated brown rice of some cultivars in Korea for rice processing products. The protein content of brown rice was significantly higher than those of germinated brown rice. The amylose content of the samples ranged from 17.09 to 18.85%. Alkali digestion value (ADV) of brown rice and germinated brown rice were described as a grade of 2-5 and 4-7, respectively. In a rapid visco analyzer (RVA) examination, pasting temperature of brown rice and germinated brown rice was 67.93-68.05 o C. In addition, the pasting characteristics of brown rice were significantly higher than those of germinated brown rice. A texture analysis test showed that germinated brown rice Haiami had the lowest hardness and germinated brown rice Samkwang had the highest adhesiveness.
