Resumo As cadeias de suprimentos de hortaliças enfrentam, nos dias atuais, o desafio de alinhar a demanda e a oferta de produtos de maneira eficiente. Do lado da demanda, clientes exigentes, interessados em produtos com qualidade IntroduçãoA baixa eficiência na distribuição de hortaliças é considerada um dos maiores entraves para o bom desempenho competitivo de toda a cadeia. A alta perecibilidade, que é uma característica inerente a esses produtos, exige um arranjo de canal de distribuição que permita sua comercialização eficiente, o que está, muitas vezes, fora do alcance dos produtores.Desde a década de 60, a maior parte da comercialização de hortaliças no Brasil tem ocorrido por meio das Centrais Estaduais de Abastecimento Sociedade Anôni-ma (CEASA). Embora o maior volume de comercialização de hortaliças ainda seja feito por meio das CEASAs, os grandes varejistas de auto-serviço têm criado formas alternativas e mais efetivas para adquirir seus produtos. Eles têm desenvolvido centrais próprias, onde a compra de hortaliças in natura é feita, em geral, diretamente dos produtores ou atacadistas especializados.
A fuzzy ruled-based system was developed in this study and resulted in an index indicating the level of uncertainty related to commercial transactions between cassava growers and their dealers. The fuzzy system was developed based on Transaction Cost Economics approach. The fuzzy system was developed from input variables regarding information sharing between grower and dealer on "Demand/purchase Forecasting", "Production Forecasting" and "Production Innovation". The output variable is the level of uncertainty regarding the transaction between seller and buyer agent, which may serve as a system for detecting inefficiencies. Evidences from 27 cassava growers registered in the Regional Development Offices of Tupa and Assis, São Paulo, Brazil, and 48 of their dealers supported the development of the system. The mathematical model indicated that 55% of the growers present a Very High level of uncertainty, 33% present Medium or High. The others present Low or Very Low level of uncertainty. From the model, simulations of external interferences can be implemented in order to improve the degree of uncertainty and, thus, lower transaction costs.KEYWORDS: fuzzy system, transactions, cassava, uncertainty. Este trabalho, de caráter descritivo, teve como objetivo analisar o perfil de franqueados como fator determinante para o sucesso das franquias, considerando desta forma algumas ferramentas de gestão empresarial como responsáveis pela expansão deste sistema. Neste estudo, pressupôs-se que o sucesso das franquias que possuem o mesmo suporte da empresa franqueadora, diante de outras que fecham após algum tempo de abertas, decorre de forma relevante do perfil do franqueado. Foi realizada uma pesquisa de caráter descritivo, baseado num estudo transversal, cujo método de coleta de dados foi a pesquisa documental referente a diversas franquias de alimentos. Foram considerados os métodos de gestão utilizados pelos franqueadores bem como as ferramentas utilizadas para melhorar o desempenho do seu negócio. Estes conjuntos de atributos pessoais e profissionais resultam na definição do perfil dos indivíduos que adotam a franquia como um modelo de negócio. As franquias de quinta geração, mais conhecidas como redes inteligentes, são consideradas foco de análise neste trabalho. A pesquisa indica que as redes existentes possuem gestores com alto grau de profissionalismo e investem fortemente na informatização dos seus empreendimentos, isto resulta em constantes monitoramentos de performance e análises de desempenho, o que gera resultados positivos tanto para o franqueado como para o franqueador. Dessa forma, o perfil do franqueado influencia, de maneira direta e decisiva, o sucesso da estratégia de franchising.
Pingado" is a Brazilian beverage similar to cappuccino, macchiato. For a good "pingado", coffee and milk should be of good quality. The formal institutions ensure the minimum attributes of quality for coffee and for milk in Brazil. However, in order to reach consumer desirable quality attributes for a differentiated "pingado" the transactions between farmers and agroindustry in quality-driven systems is likely to be conducted with hybrid forms. Thus, "Pingado Dilemma" involves the interactions between private and public institutions affect the combination of formal and informal governance mechanisms in transactions, in both chains, and involve complexities in terms of obligations to do and obligations to give in contract farming. This paper aims at analyzing the contract farming and the role of public and private institutions in transactions between farmers and agroindustry in Brazilian high-quality dairy and coffee chains. The research design used in this study is a case study based on multiple cases. The results indicate that while in dairy chain the private institutions reinforce public requirements (formal institutions), for the coffee sector, the role of private institutions is to establish and guarantee a new level of quality and differentiation. Interactions between private and public institutions affect the combination of formal and informal governance mechanisms in transactions, in both chains, and involve complexities in terms of obligations to do and obligations to give in contract farming.
