Abstract: La distribution spatiale des restaurants à Toulouse obéit à des logiques que le découpage administratif en quartiers ne permet pas toujours de comprendre. D'où cette tentative de décrire l'organisation interne de cette répartition à partir de quelques critères recueillis par enquête directe auprès de 395 établissements ouverts en mai 1985.
