Validation of Meat Inspection Results for Taenia saginata Cysticercosis by PCR–Restriction Fragment Length Polymorphism

Abstract: Bovine cysticercosis is a zoonosis caused by the larval stage (cysticercus) of the human tapeworm Taenia saginata. Infected cattle is an important food safety issue besides an economic concern. Humans get infected by eating raw or undercooked meat containing viable cysticerci. Visual meat inspection of bovines is the only public health measure implemented to control transmission to humans, but it lacks sensitivity and objectivity. It may underestimate the prevalence of the disease by a factor 3 to 10. Furtherm… Show more

“…Consequently, it can be argued that such programmes rather than the parasitic infection itself 375 380 385 390 395 which are causing the economic losses. Furthermore, current routine meat inspection has a very low sensitivity (Geysen et al, 2007). Therefore most infected beef enters the human food chain regardless.…”

“…Moreover, this depends on the expertise of the meat inspector, indicating lack of sensitivity and objectivity. The cysticerci can be confounded with sarcocystis (Chiesa et al 2010), milk spots (de Aluja 1994), T. hydatigena cysticerci (Kedra et al 2001), hydatid cysts (Deplazes et al 2005) and unstructured piece of fat and left over of muscle fasciae (Geysen et al 2007). …”

“…Nevertheless, it is important to keep in mind that, even if meat inspection is highly specific (100%), its sensitivity is very poor (Dorny et al 2004, Geysen et al 2007.…”
