Unravelling the Olfactory Sense: From the Gene to Odor Perception

Abstract: Although neglected by science for a long time, the olfactory sense is now the focus of a panoply of studies that bring new insights and raises interesting questions regarding its functioning. The importance in the clarification of this process is of interest for science, but also motivated by the food and perfume industries boosted by a consumer society with increasingly demands for higher quality standards. In this review, a general overview of the state of art of science regarding the olfactory sense is pres… Show more

“…In this paper, we study a simple model of the olfactory system that resembles its first processing layers, which transform the odor representation successively [16, 17], see Fig 1. Our model connects previous results from simulations of the neural circuits [1823] to system-level descriptions of the olfactory system [2427].…”

“…The study of aroma and aroma perception is in its infancy, but is of increasing interest to science as well as the perfume and food industries (Silva Teixeira, Cerqueira et al 2016). Aromas arise largely from the volatilization of chemicals that are then perceived by olfactory receptors in the nares (Buck and Axel 1991) and are a point of emphasis in marketing, highlighting their economic importance.…”
