Rabbits, bred under large-scale farming conditions, are fed pelleted complete feed containing extracted soybean meal (SBM), which is the protein source. In recent years, in certain areas of the world, a trend has emerged for the elimination of soybean meal from feed rations. The objective of the study was to determine the effect of the substitution of extracted SBM with a mixture of extracted rapeseed meal (RSM; 5-10%), white lupin (WL) grain (4-8%), and pea grain (3-6%) on production results, as well as nutrient digestibility and nitrogen retention in Popielno White rabbits. The ration for the control group (C) contained 15% extracted SBM, while the ration for the experimental group (E1) contained 7.5% extracted SBM, which was partially substituted with a mixture of extracted RSM, and WL and pea grains. In the experimental group (E2) diet, soybean meal was completely substituted. The obtained results indicated that the partial or complete substitution of extracted SBM with extracted RSM, pea, and WL did not have a negative effect on production results, digestibility of nutrients, and nitrogen retention. ABSTRACT:The effect of the housing system on the carcass characteristics, physical parameters of meat quality, fatty acid composition, and muscle fibre characteristics was studied in some Czech breeds. Ninety-six rabbits from seven different breeds of Czech genetic resources (Moravian Blue, Czech White, Czech Solver, Czech Spotted, Moravian White of Brown Eye, Czech Gold, and Czech Black Guard Hair) and one rabbit commercial hybrid (Hyplus), kept in two housing systems: intensive system (wire-net cages) or alternative (straw-bedded pen), were slaughtered at the age of 91 days. Alternatively housed rabbits had lower weight at slaughter, lower weight of loin, of hind legs meat, and of renal fat than rabbits from cages. The interactions between housing system and genotype were reflected significantly in pH value, and lightness and yellowness of biceps femoris. The highest (P ≤ 0.047) pH was observed in Hyplus (6.68) from cages, while the lowest value was noted in Moravian White of Brown Eye (6.26). The significantly (P ≤ 0.010) lightest meat was detected in Czech Solver (60.93) and the darkest in Czech Gold (47.81). Alternatively reared rabbits showed significantly (P ≤ 0.001) lower monounsaturated fatty acids (MUFA) (26.63%) and higher (P ≤ 0.001) polyunsaturated fatty acids (PUFA) (36.73%) contents than rabbits from cages (36.94% MUFA and 26.23% PUFA). The alternatively housed group had also higher n-3 and n-6 PUFA contents and higher PUFA : SFA ratio than the intensively housed one. Significant interactions (P ≤ 0.001) were observed in cross sectional area (CSA), diameter, and perimeter of muscle fibres of type I. The largest (P ≤ 0.001) CSA of type I muscle fibre had Czech Black Guard Hair from cages (2573.1 μm 2 ), while in pens this breed exhibited the smallest CSA (1219.6 μm 2 ), diameter (38.68 μm), and perimeter (130.2 μm). Fibre type distribution was not affected by any of the monitored parameters. The effect of interactions of the housing system and genotype was manifested mainly in physical and muscle fibre characteristics.

S t r e s z c z e n i eCelem pracy była ocena zależności między otłuszczeniem poszczególnych partii tuszki króliczej a zawartością tłuszczu śródmięśniowego, profilem kwasów tłuszczowych i kruchością mięsa królików rasy nowozelandzkiej białej (NB) i popielniańskiej białej (PB). Badaniami objęto po 20 osobników z każdej rasy. Króliczęta po odsadzeniu w 35. dniu żywiono do 90. dnia życia ad libitum pełnoporcjowymi mieszankami paszowymi o zawartości: 15,3 % białka ogólnego, 3,55 % tłuszczu surowego i 11,5 % włókna surowego. Zwierzęta poddano ubojowi w wieku 90 dni. Króliki rasy NB w stosunku do rasy PB charakteryzowały się istotnie większą zawartością tłuszczu śródmięśniowego w mięśniach międzyżebrowych (p ≤ 0,05), odpowiednio: 12,83 % i 10,39 %, w mięśniach powłok brzusznych (p ≤ 0,05), odpowiednio: 9,06 % i 6,03 % oraz w combrze (p ≤ 0,01), odpowiednio: 1,52 % i 1,01 %. Najwięcej białka oznaczono w mięśniach combra królików rasy PB (23,56 %), a najmniej -w mięśniach powłok brzusznych królików rasy NB (20,19 %). Pomiędzy rasami wystąpiły istotne (p ≤ 0,01) różnice pod względem zawartości białka w części przedniej i combrze -na korzyść rasy PB. Profil kwasów tłuszczowych mięsa różnicował badane rasy, co może wynikać z niejednakowego czasu uzyskiwania jego pełnej dojrzałości. W mięsie analizowanych ras, pochodzącym z combra stwierdzono istotną (p ≤ 0,01) dodatnią zależność pomiędzy zawartością tłuszczu okołonerkowego a podskórnego i narządowego ogółem (odpowiednio: r = 0,94 i 0,87). Podobnie, w części przedniej królików PB stwierdzono zależność pomiędzy tłuszczem łopatkowym a podskórnym i narządowym ogółem (r = 0,79). Większa zawartość tłuszczu śródmięśniowego w mięsie combra króli-ków NB była istotnie (p ≤ 0,05) dodatnio skorelowana z ilością tłuszczu okołonerkowego (r = 0,70).Słowa kluczowe: króliki rasy nowozelandzkiej białej (NB), króliki rasy popielniańskiej białej (PB), otłuszczenie, tłuszcz śródmięśniowy, kwasy tłuszczowe Dr hab.
