Study on the Physical and Biological Properties of Corn Fiber Gum from Corn Kernel Pericarp

Abstract: Corn fiber gum (CFG) was extracted from the corn kernel pericarp and the physical and in vitro biological properties of CFG were investigated. The average molecular weight was determined to be 249kDa by SEC-LLS. And the capacity of water solubility was 323mg/mL. Experimental results also showed that CFG possessed antioxidant and bile acid binding activities in a dose-dependent way.
