Study of the Fertation of Dairy Food Systems for the Production of a Cottage Product

Abstract: The article presents a scientific substantiation of the relevance of the direction of research on the development of biotechnology of a paste-like curd product enriched with functional ingredients. The results of studies of the fermentation of dairy food systems enriched with various types of milk-protein concentrates are presented.
