Background and objective: This study aims to understand worker perceptions toward care farming in the context of acceptability in leisure and welfare facilities for the elderly by examining the worker perceptions toward new programs, analyzing the correlation between care farming partnerships and acceptability, and deriving implications.Methods: To address these goals, this study employed a theoretical review of care farming and relevant partnerships and conducted a non-face-to-face survey of 59 workers of leisure and welfare facilities for the elderly. The collected data is analyzed using SPSS 26.Results: The results show that workers have negative perceptions toward current human and financial resources, but positive perceptions toward opportunities for activities and vitalizing the community. Workers also perceived that there is a need for partnership with external agencies for financing. There were also positive correlations between financial status and long-term management, indicating that a proper financing system can improve acceptability.Conclusion: In order to improve the acceptability of care farming in leisure and welfare facilities for the elderly in South Korea, it is necessary to involve more external stakeholders, especially care farming experts. There must also be a partnership-based financing system to solve financial problems. In addition, the manpower support system must be improved by building a community of their own. These implications will contribute to improving the acceptability of care farming in leisure and welfare facilities for the elderly in South Korea.

Comparison of Food Service Provision by Food Service Operational Types for Residential Facilities

Objectives: The purpose of this study aimed to compare the status of food service provision by residential facilities’s food service operational type. Methods: Data were collected by fax or web-based surveying nutritionists or facility managers working in 731 residential facilities in Korea. Residential facilities were extracted through a proportionate stratified sampling method based on region, establishment entity, types of food service, and facility size. Data analysis was performed using SAS program. Results: Among long term care facilities, self-operational food service types were 74.6% and outsourced service types 25.6%. It was found that outsourced service types were mostly chosen by private and independent establishments facilities. In addition, it was found that there were differences in food service personnel (full-time cooks, part-time cooks, and food service quality management managers), physical environments (senior living dining and cooking place), meal-related expenses, and providing food and nutrients(planing menu, compliance of menu plan, diabetic diet provision, served within 2 hours, identifying resident opinions) for each food service operation method. Finally, It was found that there were no differences in nutritional management (evaluation of nutritional status, nutrition intervention, food and nutrition service, nutrition education, nutrition counseling, multidisciplinary nutrition management by food service operational type. Conclusions: It is suggested that regulatory reforms are needed to establish a continuous monitoring and evaluation system for the quality of food service and nutrition management services for each food service type. In addition, it is suggested that a study to analyze whether there are differences in meal satisfaction, nutritional status, functional status and health status of subjects food service operational type.

Validity Study on Foodservice Management Standards for Long-Term Care Institutes Using a Delphi Technique

The foodservice management standards of long-term care institutions need to be improved to ensure nutritional and hygienic food quality. This study conducted a Delphi survey with experts to derive customized food service management standards that reflect the reality prevalent in long-term care institutions for the elderly in Seoul. From July to August 2020, 25 experts were surveyed by email for the first and second rounds of reviews. For statistical analysis, the mean, standard deviation, positive rate, median, convergence, agreement, and content validity were calculated using SPSS 24.0. For the long-term care institution meal management standards, we determined the following 10 criteria of nutrition management: one criterion for foodservice management, three criteria for menu planning, three criteria for foodservice provision, one criterion for cooking, and two criteria for food distribution. The hygiene management standards were derived as a total of 22 criteria: five criteria for facilities and environmental management, two criteria for personal hygiene management, four criteria for food ingredients management, five criteria for process management, three criteria for food storing management, and three other criteria. In addition, it was found that the staffing of nutritionists was essential to ensure food quality and safety management in long-term care facilities. Applying the results of this study can be a useful tool for improving the foodservice quality in long-term care institutions.
