Red–Green–Blue (RGB) colour system approach to study the segregation and percolation in a mixture of white wheat flour and bleached wheat bran

Abstract: SummaryIn this work, we applied a nonintrusive measurement method based on the Red-Green-Blue (RGB) image analysis system to study the segregation and percolation in a mixture of white wheat flour and bleached wheat bran. This method intended to quantify the presence of one or several colours in the surface of mixed ingredients. The mixing of flour particles with bleached and unbleached wheat bran was studied using a 90 mm closed rotating cube. This system forced the particles to roll relative to each other so… Show more

“…Lycopene and b-carotene were quantified in the samples by measuring absorbance at 450 and 660 nm. The flesh color and rind color were expressed as red, green, and blue values using a Red-Green-Blue image analysis system (Aït-Aissa et al, 2018). Descriptive statistics and other statistical analyses were evaluated using SPSS v18.0 software (SPSS Inc., Chicago, IL, USA).…”

“…CIE-Lab system values (L*, a*, and b*) were obtained and converted to an RGB (red, green, and blue) system using the ColorMine.org converter. The RGB values were placed in Adobe Color software to obtain a hexadecimal value, and from this value, the Munsell code was obtained to determine the color [27].…”
