Abstract

The objective of this research aimed to evaluate the consumption and profile of fish consumers in university communities in the metropolitan area of Cuiabá-MT. In this research participated 1,224 volunteers from academic institutions, publics and privates, through the application of a structured questionnaire was conducted, both electronically and personal interviews. The results presented in percentages and frequency distributions. It was found 32,2% of the participants eat fish rarely, the round fish are the favorites in the buying moment (48%) and more than half of the participants (50,8%) used to buy fish in the supermarket. In relation to the attributes taken under consideration when buying or fish consumption, most volunteers reported being "extremely important": the hygiene point of sale (78,3%), texture and consistency (60%), freshness (67,7%) and flavor (65,6%); 40,5% of the participants said that the price is the factor that has the greatest negative influence on consumption. The conclusion is that fish consumers evaluated are mostly, young, single, women, between the ages of 18 and 25, with a family income of 2-5 minimum salary, who consume fish with the frequently lower than the world average, mainly due to the high price of the product and the enhancement of quality attributes. RESUMOEsta pesquisa objetivou avaliar o consumo e perfil dos consumidores de pescado em comunidades universitárias da região metropolitana de Cuiabá-MT. A pesquisa foi realizada com 1.224 voluntários de Instituições de Ensino Superior, públicas e privadas, através da aplicação de questionário estruturado, por meio eletrônico e presencial. Os resultados foram apresentados em porcentagens e distribuição de frequência. Verificou-se que 32,2% dos participantes raramente consomem pescado, os peixes redondos são os preferidos no momento da compra (48%) e 50,8% dos participantes costumam realizar a compra do pescado em supermercados. Com relação aos atributos levados em consideração no momento da compra/consumo do pescado, a maioria dos voluntários relatou ser "extremamente importantes": a higiene do ponto de venda (78,3%), textura e consistência (60%), frescor (67,7%) e sabor (65,6%); 40,5% dos participantes afirmaram que o preço é o fator de maior influência negativa para o consumo dessa matéria prima. Conclui-se que os consumidores de pescado investigados são, em sua maioria, jovens, solteiros, mulheres, com idade entre 18 e 25 anos, com renda família de 2-5 salários mínimos, que consomem pescado com frequência e quantidade inferiores à média mundial, principalmente devido ao preço elevado do produto e a valorização de atributos de qualidade.Palavras-chave: questionário estruturado; disponibilidade do pescado; preço; qualidade.
