Predominance of Lactobacillus plantarum Strains in Peruvian Amazonian Fruits

Abstract: The objective of this research was the identification and characterization of lactic acid bacteria (LAB) isolated from Peruvian Amazonian fruits. Thirty-seven isolates were obtained from diverse Amazonian fruits. Molecular characterization of the isolates was performed by ARDRA, 16S-23S ITS RFLP and rep-PCR using GTG 5 primers. Identification was carried out by sequencing the 16S rDNA gene. Phenotypic characterization included nutritional, physiological and antimicrobial resistance tests. Molecular characteriz… Show more

“…Therefore, we infer that when D3G was the only carbon source, it was utilized by L. plantarum as a sugar with function similar to those of cellobiose; on the contrary, the utilization of D3G was inhibited when it was used concurrently with a better carbon source such as cellobiose. Generally, L. plantarum strains are able to ferment glucose, maltose, cellobiose, fructose and sucrose ( Sanchez et al, 2019 , Ucar et al, 2020 ). Cellobiose is a disaccharide that can be used as a food ingredient ( Messinger et al, 2020 ).…”
