Perfil Higiênico de Carne Bovina Moída Comercializada na Cidade do Rio de Janeiro e Adjacências, Estado do Rio de Janeiro, Brasil

Abstract: Foi avaliada a ocorrência de soro-grupos do gênero Salmonella em 150 amostras de carne bovina moída comercializada em açougues da cidade do Rio de Janeiro e adjacências. Após as coletas, as amostras de carne foram mantidas sob-refrigeração até serem feitas as semeaduras em Tetrationate Broth. Posteriormente foram repicadas em Eosin-Methilen-Blue Agar e Salmonella-Shigella-Agar.
