Pasting, rheological, and retrogradation properties of starches from dual‐purpose sorghum lines

Abstract: In this study, we evaluated the functionality of starches extracted from dual-purpose sorghum lines (KDFGS1, KDFGS6, KDFGS9, and KDFGS20). There were no significant differences in swelling factor, solubility, or paste clarity among the lines. Sorghum starches exhibited similar pasting patterns with differences in peak viscosity, breakdown, and setback. Starch pastes had similar consistency and had shear-thinning behavior. Sorghum starches showed good gel setting ability, while hardness, cohesiveness, and sprin… Show more

“…Já a amilopectina, por ser uma molécula grande, é parcialmente fixada na parte cristalina, tornando-a menos propensa à lixiviação (ZHU, 2014). Segundo Ehtiati et al (2017), após a gelatinização, as moléculas de amido solúvel podem facilmente lixiviar em água, mas complexos insolúveis de amilose-lipídios retardam esse processo.…”

“…Water absorption (WA) was determined using Bauman method and expressed as mL water g −1 sample. [20] Solubility (S) and Swelling Power (SP) at 95°C were measured according to Ehtiati et al [21] 2.2.9. Color Color parameters of isolated starches were measured using a MI-NOLTA CM-508d spectrophotometer (Minolta Co., LTD, Japan) under the following conditions: illuminant D65, observer angle of 10°, SCE (Specular component excluded), CIE system parameters: L*, a*, b*.…”
