Mold characterization in "RAPRIMA" tempeh yeast from LIPI and overfermented Koro Pedang (Jack Beans) tempeh

Abstract: Tempeh mold is tempeh starter mixed with legumes as a substrate. Generally, tempeh molds are Rhizopus sp. but they are not specific to a particular genus.
