Abstract. Pigments are essential to the life of all living organisms. Animals and plants have been the subjects of basic and applied research with the aim of determining the basis of the accumulation and physiological roles of pigments. In crop species, the edible organs show large variations in colour. In durum wheat grain, which is a staple food for humans, the colour is mainly due to two natural classes of pigment: carotenoids and anthocyanins. The carotenoids provide the yellow pigmentation of the durum wheat endosperm, and consequently of the semolina, which has important implications for the marketing of end products based on durum wheat. Anthocyanins accumulate in the aleurone or pericarp of durum wheat and provide the blue, purple and red colours of the grain. Both the carotenoids and the anthocyanins are known to provide benefits for human health, in terms of decreased risks of certain diseases. Therefore, accumulation of these pigments in the grain represents an important trait in breeding programs aimed at improving the nutritional value of durum wheat grain and its end products. This review focuses on the biochemical and genetic bases of pigment accumulation in durum wheat grain, and on the breeding strategies aimed at modifying grain colour.

Article InformationThe objective of the study was to document homemade dishes/beverages from wheat landraces and socio-cultural lifestyles of people related to wheat production in Ambo and Dandi Districts, West Shewa. A total of four Peasant Associations (PAs) (Awaro, Gosu-Kora, Awash-Bole and Haro-Dule) were purposively selected from the two districts. A questionnaire on wheat seed systems, utilization and socio-cultural life style of people related to wheat landraces cultivation and conservation were developed. Focused group discussions were made at village level among groups of farmers on specific points led by the principal researchers. Emphasis was given to women since the utilization of crops in the households are usually their responsibilities. In addition, a total of 90 households were interviewed following the questionnaire developed on the three themes. Finally consolidated ideas were noted by the researchers and organized into tables and figures of proportions. Farmers reported that nine different homemade dishes/snacks and two beverages which can be made from wheat landraces. These include dufo-dabo, budena/injera, ambasha/kita, kinche, marka, mullu, aka'i, dabo-kolo, biscuit and beverages farso and arake. The different wheat landraces are suited for the preparation of at least two or more different dishes/snacks and beverages. These different dishes/snacks and beverages are prepared at regular times or on special occasions (e.g. New Year, religious and non-religious social gatherings). Some of the dishes and beverages are used as sources of income by urban and suburban women who sell their products at markets or bus stops. Seed colour plays a critical role in determining end use qualities. White seed varieties are preferred for food uses while the purple seed types are used for beverage production. The people of the study areas have deep rooted culture connected to wheat production. Farmers use folksongs and proverbs to express the end use qualities and their peculiar morpho-agronomic characteristics of different wheat landrace varieties.

Plant Breed., 49: 116-122.Products made from wheat are the most important components of the human diet, and could also become a source of functional foods and feed ingredients, e.g. minerals, vitamins and/or phytochemicals. The caryopses of certain wheat genotypes contain antioxidants, i.e. anthocyanins or carotenoids, which cause purple, blue or yellow coloration. The first step before the introduction of these traits into individual wheat cultivars is the characterization of relationships and the possibility of new gene combinations. In this study, relationships among 24 genotypes with different types of caryopsis colour were investigated by means of microsatellite markers. Using 44 SSR (Simple Sequence Repeat) markers it was possible to detect a total of 184 alleles; on average, approximately 4 alleles were detected at a microsatellite locus. Using a set of 5 SSR markers (Xgwm636, Xbarc077, Xwmc262, Xgwm397 and Xwmc219) with PIC (polymorphic information content) values higher than 0.70, it was possible to differentiate among all the genotypes analysed. A dendrogram was created on the basis of all SSR markers, and showed that the genotypes were divided into two groups. Three, and one genotype with purple and blue caryopsis, respectively, belonged to one cluster, while the remaining twenty formed the second, greater cluster, which was subdivided into 2 sub-clusters: one of them involved genotypes with blue caryopses, and the other those with yellow and red caryopses. The genotype of tall wheatgrass (Thinopyrum ponticum), as a possible donor of genes responsible for blue caryopses, was also classified. These results can be used in wheat breeding programmes aimed at the selection of functional foodstuffs.
