2007, č. 7-8, s. 206-214. Článek se zabývá historií, metodami a současným stavem taxonomie pivovarských kvasinek. Pro zajištění standardnosti hotového piva je důležité použití čistých kultur kvasinek při jeho výrobě. Dříve byly kvasinky klasifikovány na základě svého fenotypu metodami tzv. tradiční taxonomie, které jsou v článku stručně zmíněny. V krátkém přehledu se uvádí historie klasifikace a nomenklatury pivovarských kvasinek. Pozornost je dále věnována především molekulárně-biologickým technikám, které umožňují klasifikaci kvasinek na základě jejich fylogenetické příbuznosti. V článku jsou vysvětleny základní principy vybraných molekulárních metod a jejich vztah k taxonomii pivovarských kvasinek. Autoři doporučují vrátit se k historickému označení Saccharomyces carlsbergensis pro kvasinky spodního kvašení a Saccharomyces cerevisiae pro svrchní pivovarské kvasinky.Matoulková, D. -Šavel, J.: Brewing and the taxonomy of brewer's yeast. An important factor in ensuring standard quality of finished beer is the use of pure yeast cultures in the production. Yeast used to be classified on the basis of its phenotype by the methods of traditional taxonomy, which are briefly addressed in the text. A short overview is given of the history of brewer's yeast classification and nomenclature. Particular attention is paid to molecular biological techniques that enable us to classify yeast on the basis of its phylogenetic relatedness. Basic principles of selected molecular biological methods and their use in brewer's yeast taxonomy are explained. We recommend restoring the historical name Saccharomyces carlsbergensis for bottom yeast and using Saccharomyces cerevisiae for top brewer's yeast. ÚVODVýroba piva je jednou z nejstarších lidských činností, která od doby vzniku prodělala sice určité změny, ale zachovala svou podstatu. S vývojem lidského poznání se postupně odhalovaly příčiny průběhu jednotlivých článků výrobního procesu, praktické změny se však prosazovaly pomaleji (možná ku prospěchu věci).Pivovarská výroba se zakládá na využití kvasinek. Kvasnice jsou skutečně surovinou zvláštní povahy [1]. Pokud se něco v pivovaru nedaří, mohou za to často dva viníci: výrobci sladu a dodavatelé kvasnic, mezi něž se ochotně zahrne mikrobiologické oddělení pivovaru v případě vlastní propagační stanice. Ve starší odborné literatuře byl dobře známý termín degenerace kvasnic, který však zjevně zahrnoval nežádoucí změny vlastností kvasnic způsobené jak genetickými změnami, tak změnami vnějších podmínek.S podstatou kvasnic si nedovedl poradit ani původní německý Zá-kon o čistotě piva (Reinheitsgebot), který nemohl dobře definovat v této době ještě nedostatečně poznanou surovinu. Příčinu kvašení piva definitivně odhalil až Louis Pasteur okolo roku 1876, kdy uveřejnil svou slavnou Studii o pivu [2].V poměrně krátké době nalezl Pasteurův objev praktické využití
