Low temperature (LT)-induced membrane lipid metabolism resulted in different degrees of chilling injury (CI) in five different chill-sensitive peach varieties. Among them, ‘Chibaifen’ peaches had the most serious occurrence of CI and the strongest cold sensitivity by having the largest up- and down-regulated numbers of phosphatidylcholine (PC) and triacylglycerol (TAG) components and maintaining higher levels of fold change, peak area abundance and unsaturation of TAG components induced by LT. However, ‘Hujing’ peaches had the most lightest occurrence of CI and had the strongest cold tolerance by having the more up-regulated numbers of PC and TAG components, but maintaining lower levels of fold change, peak area abundance and unsaturation of each lipid component induced by LT. This study provides suitable research materials for improving chill-sensitive peach varieties and developing effective fresh-keeping technologies and a scientific basis for improving the quality competitiveness of cold-tolerant peach varieties.

The cold‐sensitive peach fruits are prone to chilling injury (CI). γ‐aminobutyric acid (GABA) has been confirmed to effectively improve peaches’ cold tolerance. This research aimed to probe the role of dynamic changes in membrane lipid metabolism in GABA‐mediated peaches’ cold tolerance and reveal the underlying mechanisms based on lipid metabolomics. GABA treatment improved peaches’ cold tolerance by reducing phosphatidic acid (PA) accumulation via inhibiting phospholipid degradation, attenuating PA biosynthesis, and maintaining higher phosphatidylcholine (PC) and phosphatidylethanolamine (PE) levels. Under chilling conditions, GABA treatment protected peaches against low‐temperature stress and delayed CI by maintaining higher PC and PE levels and enhancing the massive accumulation of diacylglycerol (DAG) and triacylglycerol (TAG). This study provides a novel mechanism regulating cold tolerance of postharvest peach fruits.

BACKGROUNDIn order to comprehend the regulatory mechanisms that result in the alleviation of sweet cherry pitting disorder through cold shock (0 °C ice–water mixture for 10 min), an investigation was conducted into the impacts of cold shock treatment (CST) on membrane lipid metabolism, antioxidant enzyme activity, as well as pitting of cold‐stored sweet cherry fruit.RESULTSCST significantly inhibited the increase in pitting incidence, pitting index, and decay incidence. The CST treatment provided greater titratable acidity, firmness as well as total content of soluble solids. The use of CST prevented the build‐up of superoxide anions, hydrogen peroxide, malondialdehyde, and reduced permeability of cell membranes. When in contrast to control group, the CST also raised the expression levels along with activity of the antioxidant enzymes ascorbate peroxidase (APX), glutathione reductase (GR), superoxide dismutase (SOD), and catalase (CAT). Furthermore, CST reduced the amount of fruit cell membrane peroxidation, suppressed the activity of phospholipase and lipoxygenase, postponed the rise in saturated fatty acids (SFAs) and decrease in unsaturated fatty acids (USFAs), ultimately keeping a high ratio of USFAs to SFAs.CONCLUSIONCST can alleviating pitting disorder in sweet cherry fruit via preventing peroxidation of membrane lipid and elevating the antioxidant enzymes activity. © 2024 Society of Chemical Industry.
