“…From the late 1960s, when the concept of the Mediterranean diet was created, which will be discussed a bit later, to date, this cuisine has experienced various transformations and conceptualizations. It went from a healthy model of a traditional diet to a model of a sustainable diet (Dernini et al 2017;Medina 2021aMedina , 2021b, becoming an intangible cultural heritage along the way. This paper, which does not include a critical look at the phenomenon of intangible cultural heritage and the disputes that arise from it (for example, Kirscheblatt-Gimblett 2006; Hameršak and Pleše 2018; Brulotte and Di Giovine 2014), will try to identify the conceptual transformations of the Mediterranean diet in its dynamic history over the last seventy-or-so years.…”
