Resveratrol (RS), a polyphenol compound found in grapes and grape products, including wine, peanuts and berries, exists in cis-and trans-isomeric forms. RS is believed to decrease circulating low-density lipoprotein cholesterol levels and reduce cardiovascular disease (CVD) risk. However, it is possible that RS has other mechanisms to reduce the risk of CVD without altering lipid levels. The objective of this review is to critically examine results from recent research concerning potential effects of RS on CVD. RS exerts several health benefits including anti-atherogenic, anti-inflammatory and anti-cancer effects. RS may also prevent lipid oxidation, platelet aggregation, arterial vasodilation and modulates the levels of lipids and lipoproteins. As a potent, anti-oxidant RS reduces oxidative stress and regenerates a-tocopherol, which further strengthens the anti-oxidant defense mechanism. RS has been considered safe as no significant toxic effects have been identified, even when consumed at higher concentrations. This evidence identified RS as an effective anti-atherogenic agent, which could be used in the prevention and treatment of CVD.

Resveratrol (3, 5, 4′‐trihydroxystilbene) is a nonflavonoid polyphenol that naturally occurs as phytoalexin. It is produced by plant sources such as grapes, apples, blueberries, plums, and peanut. This compound has critical roles in human health and is well known for its diverse biological activities such as antioxidant and anti‐inflammatory properties. Nowadays, due to rising incidence of different diseases such as cancer and diabetes, efforts to find novel and effective disease‐protective agents have led to the identification of plant‐derived compounds such as resveratrol. Furthermore, several in vitro and in vivo studies have revealed the effectiveness of resveratrol in various diseases such as diabetes mellitus, cardiovascular disease, metabolic syndrome, obesity, inflammatory, neurodegenerative, and age‐related diseases. This review presents an overview of currently available studies on preventive properties and essential molecular mechanisms involved in various diseases.

 PROZDROWOTNE WŁAŚCIWOŚCI RESWERATROLUS t r e s z c z e n i e Resweratrol (3,5,4'-trihydroksy-trans-stilben) jest naturalną fitoaleksyną, syntetyzowaną m.in. w skór-kach winogron w odpowiedzi na infekcje grzybicze, stres oksydacyjny oraz promieniowanie UV. W wysokim stężeniu występuje również w winie, głównie czerwonym. Związek ten ma szeroki zakres aktywności biologicznej, m.in. właściwości przeciwzapalne, antyangiogenne, antyoksydacyje oraz przeciwnowotworowe. Ponadto chroni organizm przed chorobami układu krążenia i neurodegeneracyjnymi, hamuje oksydację cholesterolu frakcji LDL, agregację płytek krwi i angiogenezę. Słowa kluczowe: resweratrol, antyoksydanty, przewlekłe choroby niezakaźne WprowadzenieResweratrol należy do składników żywności charakteryzujących się aktywnością biologiczną. Związek ten występuje głównie w owocach i ich przetworach, zwłaszcza w winogronach i w dużych stężeniach w czerwonym winie. Zjawisko paradoksu francuskiego spotęgowało wzrost zainteresowania resweratrolem. Związek ten ma szeroki zakres działania na organizm człowieka zarówno w zapobieganiu, jak i leczeniu róż-nych chorób. Resweratrol wywiera korzystny wpływ na układ krwionośny. Badania in vitro wykazały, że hamuje on rozwój procesów nowotworowych. Ponadto sugeruje się, że związek ten chroni przed chorobami neurodegeneracyjnymi, działa przeciwutleniająco, antyproliferacyjnie, przeciwzapalnie oraz antyangiogennie.Celem niniejszej pracy było przedstawienie najnowszych danych dotyczących resweratrolu, jednego z wielu obecnie badanych składników nieodżywczych o udowodnionych właściwościach prozdrowotnych. Struktura chemiczna tego związku podobna jest do syntetycznego dietylostilbestrolu estrogenowego (4,4'-dihydroksy-trans-α, β-dietylostilbenu), dlatego też zaliczany jest do fitoestrogenów -hormonów roślinnych, które mają działanie podobne do estrogenu [14,19].Resweratrol występuje w postaci dwóch form izomerycznych cis-i trans-. Transresweratrol jest stilbenem fenolowym występującym w wielu roślinach, m.in. winoroślach (Vitaceae), a w szczególności winorośli właściwej (Vitis vinifera) [1,36]. Druga forma resweratrolu -cis-, powstaje wskutek izomeryzacji trans-resweratrolu i po rozpadzie cząsteczki polimerów resweratrolu podczas fermentacji skórek z winogron, w wyniku działania promieni UV oraz w warunkach wysokiego pH [14]. Forma transresweratrolu została dużo lepiej poznana niż forma cis-. W winie obie izomeryczne struktury resweratrolu znajdują się razem z kwasem galusowym i innymi przeciwutleniaczami, takimi jak katechiny i kwercetyna [30].
