ABSTRACT[Identification of Salmonella Sp. Bacteria, Antibiotic Tetrasicline in Cultivated Silkworms using Chicken Manure Media]Sustainability of farming activities is determined by the use of materials that are free from pathogens, residues of antibiotics and other chemicals. Prevention of pathogenic microorganisms can be done through the use of disease-free seed with a certificate Specific Pathogen Free guided by way of Good Aquaculture (CBIB). This study uses a completely randomized design (CRD) with 2 treatment (fermentation methods and non-fermented) and three replications. The identification results on the silkworms with fermentation methods and non-fermenting bacteria positive for Salmonella sp positive and tetracycline antibiotic residues (> 32 ppb) in the silkworm cultivation. Productivity silkworms in the fermentation medium are higher than in non-fermented in the amount of 267.91 ± 113.18 g / m2 / cycle and for non-fermented 201.89 ± 16,85g / m2 / cycle. Absolute growth fermentation medium peak at 30.92 ± 2.9 g / m2 and non-fermented 9.12 ± 1.99 g / m2. KEYWORDS: Antibiotics, silkworms, chicken manure, Salmonella sp.

Salmonella sp. can contaminate layer chicken eggs and cause salmonellosis. This study aims to determine whether there is contamination by Salmonella sp. in layer chicken eggs traded in traditional markets of Medan Johor District. Sampling locations were determined by purposive sampling, including Kwala Bekala Market, Johor Market, and Tikung Market, with 90 samples. The working procedures included isolating bacteria from egg yolks using the pour plate method on SSA media, observing the bacteria morphology, calculating total Salmonella sp. colonies, Gram staining, and biochemical tests. The research results obtained indicated that the average total colonies of Salmonella sp. in Kwala Bekala Market were 1.45 x 105 CFU/g, in Johor Market they were 5.8 x 104 CFU/g, and in Tikung Market they were 3.6 x 104 CFU/g. The colony morphology of Salmonella sp. is circular and colourless, with a black spot in the center. The Salmonella sp. bacteria are Gram-negative with a red color, and are bacilli. Biochemical tests showed indole (-), MR (+), VP (-), SCA (+), and TSIA (+) test results. Based on the study results, it can be concluded that 4.44% of the positive samples were contaminated with Salmonella sp. in the traditional market of Medan Johor District and exceeded the BMCM in SNI 7388:2009.

Ayam broiler merupakan salah satu sumber protein yang dikonsumsi oleh masyarakat luas, memiliki harga relatif terjangkau dan sangat umum di jumpai di pasar – pasar tradisional. Kota Binjai memilik tingkat kebutuhan yang terhadap daging ayam broiler sehingga penting untuk mengetahui tingkat keamanan dalam mengkonsumsi daging ayam broiler dari segi cemaran mikroba. Penelitian ini bertujuan untuk menganalisis cemaran mikroba pada daging ayam broiler di beberapa pasar tradisional di Kota Binjai. Penelitian ini menggunakan metode deskriptif untuk mengetahui adanya cemaran bakteri pada daging ayam broiler. Parameter penelitian meliputi pengamatan jumlah koloni mikroba dan analisis cemaran mikroba Salmonella sp. dan E. coli. Hasil penelitian menunjukan jumlah koloni mikroba diketiga pasar memenuhi syarat SNI dan negative pada uji cemaran Salmonella sp. tetapi terjadi kontaminasi pada uji cemaran Eschericia coli.
