Integrated multivariate analysis to evaluate effects of pre-slaughter handling on pork quality

Abstract: ABSTRACT:The aim of this study was to investigate the effect of pre-slaughter handling on the occurrence of PSE (Pale, Soft, and Exudative) meat in swine slaughtered at a commercial slaughterhouse located in the metropolitan region of Dourados, Mato Grosso do Sul, Brazil. Based on the database (n=1,832 carcasses), it was possible to apply the integrated multivariate analysis for the purpose of identifying, among the selected variables, those of greatest relevance to this study. Results of the Principal Compone… Show more

“…The animal response to a particular stressor is very complex, multivariant, and modified by various factors such as genetic factors, breed, temperament, inter and intra-animal variance, previous exposure to stress, human contact, animal ability to adapt towards specific stress, presence of one or more stressors and their interactions, intensity, and duration of stress. All these factors predict that animal stress responses are very complicated and unpredictable [ 21 , 22 , 23 ]. Under the influence of various stressors, the animal body undergoes various physiological and behavioral changes to maintain homeostasis.…”

“…Regarding this, it is possible to mention only the study of Bishop et al (2010), who studied the relationship of this type of forest to the geomorphometric condition through discriminant analysis in the Natural Reserve of Serra das Almas, state of Ceará. In order to analyze the various factors that may influence the characteristics of a study object, it is important to use statistical methods that can describe and analyze data from many correlated variables, assuming that they explain the complexity of a biological system (NASCIMENTO et al, 1997). From this, the multivariate analysis is presented aiming to analyze together variables that are experimentally correlated (MACHADO et al, 2014).…”
