Although, there was a lot of research on inactivation of bacteria (Reina, Jin, Zhang, & Yousef, 1998;Raso, Alvarez, Condon, & Trepat, 2000;Zhang, Chang, Barbosa-Canovas, & Swanson, 1994a;Evrendilek, Zhang, & Richter, 1999;Sastry & Barach, 2001;Cho, Yousef, & Sastry, 1999) and yeasts (Zhang, MonsalveGonzalez, Barbosa-Canovas, & Swanson, 1994b), limited literature was found on inactivation of molds (Jia, Zhang, & Min, 1999;Raso, Calderon, Gongora, Barbosa-Canovas, & Swanson, 1998) by electric field treatments such as ohmic heating and pulsed electric fields. However no published data has been found in literature discussing the effects of AC heating on A. niger, PME and pectin content of tomato fruit.…”
