Pulses are widely acknowledged for their high nutritional value due to high protein content, low content in calories, and low glycemic index; they are a good alternative to animal proteins thus offering a considerable number of social, environmental, and health benefits. Despite pulses being widely acknowledged as healthy and sustainable food, in mainly European countries, consumption is growing but still lower than the recommended level, production is unprofitable in comparison to the current market prices level, and a reduction in harvested area has led to a strong dependence on import for pulses supply. Pulses are particularly fitting to the feature of local food because they can be suitably grown in any context, even in the most complex areas, and consumer interest and awareness of food origin has strongly increased in recent years. Lentils were selected as a case study in this paper that aims to define which features are effective on market price and, in particular, the role of origin declaration on label plays in defining the market price and how the origin attributes may enhance market price and farms competitiveness. The methodological tool for this investigation is the hedonic price model, useful to explain the effects of attributes of pulses affecting the market price. Results contribute to a better understanding of the pulse market, emphasizing that the “origin declaration” on label may have a positive effect on market price.

Impact of COVID-19 on Food and Plastic Waste Generated by Consumers in Bangkok

The crisis ignited by COVID-19 has transformed the volume and composition of waste generation and requires a dynamic response from policy makers. This study selected Bangkok as a case study to semi-quantitatively examine the impact of the COVID-19 outbreak on consumer-generated food and plastic waste by examining changes in lifestyles and consumption behaviour through a face-to-face questionnaire survey. Travel bans and diminished economic activity due to COVID-19 have led to a dramatic reduction in waste from the business sector and in the total amount of municipal waste generated. However, the results of the survey showed that both food and plastic waste generated by households in Bangkok increased during COVID-19. The shift from eating out to online food delivery services led to an increase in plastic bags, hot-and-cold food bags, plastic food containers, and food waste. Reasons for the increase in household food waste during COVID-19 varied, with respondents citing excessive amounts of food and unappetising taste, followed by exceeding the expiration date and rotting/foul odours. These reasons may be the result of the inability to predict quantity and quality when ordering online, and inadequate food planning and management by consumers. To achieve more effective food and plastic waste management, home delivery services, consumer food planning and management, and the formation of a circular economy based on localised supply chains may be considered as important intervention points.

PurposeThis study aims to examine the role of hunger, environmental, economic, landfill and water shortage concerns as significant dimensions of consumer social awareness marketing in socially responsible plate food consumption.Design/methodology/approachTo carry out their purpose, the authors validate the hypothesized model empirically through data from 1,536 households using structural equation modeling (SEM). In particular, the construct measures of the structural model have been tested by confirmatory factor analysis (CFA).FindingsThe outcome the authors came up with is coherent with the hypothesized model, and it proves a positive relationship of the five dimensions identified on consumer awareness. Moreover, the study results show the crucial role of landfill and water shortage concerns in measuring consumer awareness.Practical implicationsThese findings may be of interest to practitioners, academics and policymakers for socially responsible food consumption guidance and training for planning consumer awareness programs. More in detail, this study offers the indication that the dimensions of the social consumer awareness construct are differing from commercial consumer awareness.Originality/valueEven though several previous studies have addressed the concept of consumer awareness concerning product and service purchase decisions, this is one of the first research studies on consumer awareness as a multidimensional construct in social marketing studies domain.
