In this work, a micro/nanofiber antibacterial pad with a core–shell structure was successfully designed to extend the shelf life of the cold fresh lambs. The micro/nanofiber was prepared by electrostatic spinning using polylactic acid as the shell and Eudragit L 100–55 as the core, and 0.4% (w/w) tea polyphenols (TP) as an antibacterial agent was encapsulated in the core section. Release behavior showed that TP could be effectively protected in an acidic environment to achieve a slow‐release effect. The antibacterial experiment revealed that the antibacterial rates of the coaxial antibacterial pad containing 0.4% TP against Escherichia coli and Staphylococcus aureus were 73% and 53.88%, respectively. As a result, freshness preservation experiments, using an antibacterial pad with the core–shell structure, could extend the shelf life of the cold fresh lamb. Novelty impact statement The micro/nanofiber antibacterial pad with a core–shell structure was prepared. The antibacterial pad with a core–shell structure could control the slow release of tea polyphenols. The micro/nanofiber antibacterial pad could extend the shelf life of the cold fresh lamb.

The purpose of this study was to introduce caffeic acid (CA) into electrospun nanofibers made of carob flour, whey protein concentrate (WPC), and polyethylene oxide (PEO). The effects of WPC concentration (1% and 3%) and CA additions (1% and 10%) on the characteristics of solutions and nanofibers were investigated. The viscosity and electrical conductivity of the solutions were examined to determine characteristics of solutions. Scanning electron microscopy (SEM), X-ray diffraction (XRD), thermogravimetric analyzer (TGA), differential scanning calorimetry (DSC), water vapor permeability (WVP), and Fourier transform infrared (FTIR) analysis were used to characterize the nanofibers. According to the SEM results, the inclusion of CA into nanofibers resulted in thinner nanofibers. All nanofibers exhibited uniform morphology. CA was efficiently loaded into nanofibers. When CA concentrations were 1% and 10%, loading efficiencies were 76.4% and 94%, respectively. Nanofibers containing 10% CA demonstrated 92.95% antioxidant activity. The results indicate that encapsulating CA into carob flour–WPC-based nanofibers via electrospinning is a suitable method for active packaging applications.

Ajowan (Trachyspermum ammi L.) is a spice traditionally used in Middle Eastern medicine and contains a valuable essential oil (EO) exploited in different fields, such as pharmaceutics, agrochemicals and food additives. This EO is mostly characterized by the thymol to which most of its biological properties are related. Given the economic value of ajowan and its increasing demand across the globe, the extraction method used for its EO is of paramount importance in terms of quality and quantity of the final product. In the present study, we used the design of experiment (DoE) approach to study and optimize the extraction of the ajowan EO using the microwave-assisted extraction (MAE), a novel extraction technique with high efficiency, low energy consumption, short process length and low environmental impact. A two-step DoE (screening followed by surface response methodology) was used to reduce the number of experiments and to improve the cost/benefit ratio. Reliable mathematical models, relating the more relevant EO features with the extraction conditions, were obtained and used to identify the best experimental conditions able to maximize the yield and thymol concentration. The optimized MAE procedure assures an EO with a higher yield and thymol amount compared with the standard hydrodistillation procedure.
