Efficiency of the FTIR ATR spectrometry for the prediction of the physicochemical characteristics of Melipona subnitida honey and study of the temperature's effect on those properties

Abstract: The efficiency of ATR FT-IR spectrometry was compared with recommended methodologies for physicochemical parameters of eighteen samples of Melipona subnitida honey. Significant differences were found between the values obtained using those techniques for hydroxymethylfurfural, ash and electrical conductivity. The results for the other parameters did not differ significantly, suggesting that this rapid and nondestructive methodology may predict parameters usually used to assess honeys' quality. The effects of d… Show more

“…The high moisture content found in honeys and stingless bees facilitate the loss of chemical stability during storage, as verified by Chuttong, Chanbang, Sringarm, and Burgett (2015), Jimenez, Beristain, Azuara, Mendoza, and Pascual (2016) and Almeida-Muradian, Stramm, and Estevinho (2014). As a way of minimizing these changes, due to their particular characteristics, the use of thermal treatment may become a viable conservation alternative.…”

“…A diferença encontrada entre os extratos de ceras de abelhas sem ferrão pode estar associada a diversos fatores relatados por alguns autores, como: flora, clima, ambiente, composição físico-química, temperatura e os métodos de processamento empregados (Silva et al, 2009;Almeida-Muradian et al, 2013;Cimpoiu et al, 2013).…”

“…The PLS calibration was performed for each measurand, using the software Opus 6.5 module Quant, and based on the model described by Ruoff et al 6 and published previously by Almeida-Muradian et al, 3,4 PLS cross-validations and test set validation were performed. The 14 measurands obtained from this analysis were: moisture, electrical conductivity, free acidity, glucose, fructose, erlose, isomaltose, maltose, melezitose, trehalose, turanose, pH, the sum of glucose plus fructose and the ratios fructose/glucose and glucose/water.…”

“…2 In this study, a previously published calibration was used, 3 which had been successfully used for predicting the physicochemical parameters in the quality control of stingless bee Brazilian honey. 4 Infrared Spectroscopy of different monofloral honey samples and subsequent statistical analysis using principal component analysis (PCA) and linear discriminant analysis (LDA) showed that successful classification of the botanical origin of honey is possible. MIR (mid--infrared) spectroscopy has been successfully used for classification of monofloral European honey.…”
