Abstract: This study was conducted (i) to improve storage systems of young shaped-coconut before delivering to markets; (ii) to identify optimal concentration of sodium metabisulfit on young shaped-coconut; and (iii) to introduce suitable packaging preventing browning on young shaped-coconut.
