Adopting cover crops for vineyard soil management can provide several benefits, including soil protection, reductions in vine vigor, and enhancements in berry composition. However, the effects of this practice on wine aroma have seldom been addressed. This study aimed to determine the influence of different cover crops and soil tillage on the must and wine amino acid composition and wine volatile compounds of the red cultivar, 'Mencía' (Vitis vinifera L.), grown in Northwest Spain. Treatments consisted of soil tillage (ST), native vegetation (NV), English ryegrass (ER), and subterranean clover (SC). Cover crops did not alter the macro-constituents of musts; however, musts from NV and SC tended to lower concentrations of amino acids. Some color attributes of wines were influenced by cover crops in the vineyard. Methanol and trans-linalool oxide (pyran) concentrations in wines were significantly affected by soil management. Professional tasters encountered differences in visual, aroma, and palate descriptors of wines depending on the treatment imposed in the vineyard. These alterations in sensory properties seemed to obey to slight modifications of wine chemical characteristics due to vineyard soil management. According to these results, cover crops might be useful for modulating wine aroma in humid climates.

Despite Vitis vinifera L. is a drought-tolerant species-rainfed traditionally grown in a very diversity of climates-irrigation has more and more become a usual practice aimed to obtain regular yields along seasons and to control must composition. Results on vineyard irrigation are dependent on the timing, length and intensity of the water deficit. From budbreak to flowering, shoot growth is very sensitive to water stress, while reproductive growth is almost unaffected. Severe water deficit during fruit set can reduce yield by affecting ovary cell multiplication and expansion. During maturation water stress induces yield reduction by limiting berry growth; along this phase must composition is also affected. There is a positive, linear relationship between must sugar content and available water; however, no relationship has been found to either total acidity or pH. Biosynthesis of anthocyanins and fruity aromas is enhanced by water deficit. Usually, wines from moderate irrigation treatments scored the highest. There is a general agreement that severe, long water deficits diminish must quality, leaf area, fertility and yield, and it has a negative carryover effect on the next seasons by limiting wood reserves to be used the following seasons.

Este trabajo analiza el efecto del riego sobre la composición aminoacÍdica del mosto de 4 variedades blancas cultivadas en diferentes DD.OO. españolas durante el periodo 2012-2014. Se estudió la concentración de aminoácidos precursores de aromas de fermentación: Aspártico (Asp), Isoleucina (Ile), Leucina (Leu), Treonina (Thr), Tirosina (Tyr) y Valina (Val), y la suma de ellos (APN), del aminoácido azufrado Metionina (Met) y del total de aminoácidos libres (FAN). Las variedades, su localización y los tratamientos aplicados fueron: Cigüente (Ci) en Badajoz, secano y riego al 100% de ETc; Macabeo (Ma) en Albacete, riego a 25% y 33% aprox. de ETc; Moscatel de AlejandrÍa (Mo) en Valencia, riego a 50% y 100% de ETc; y Verdejo (Ve) en Valladolid, secano y riego a 100% aprox. de ETc. El mosto analizado tenÍa un valor de 22-24 ºBrix. Los análisis de aminoácidos se efectuaron mediante HPLC. Los tratamientos hÍdricos aplicados modificaron los valores de los aminoácidos en tendencia, significación y extensión según la variedad. En Mo apenas variaron. En Ci y, sobre todo, en Ma el efecto en amplitud y significación dependió del año. En Ve el riego provocó todos los años del estudio idéntica tendencia al descenso en los valores de los aminoácidos. Por tanto, la respuesta de la composición nitrogenada del mosto al régimen hÍdrico y las condiciones meteorológicas anuales fue diferente en cada variedad cultivada en diferente lugar.
