Abstract:In this study done, by providing the hot air drying of Kanlıca mushroom collected from Karabuk city; prevention of aflatoxin occurrence, shelf life extension, taking precaution against early putrefaction and decomposition, protection of the beneficent aromas in its content have been ensured.
