Desempenho Produtivo e qualidade da carcaça de cordeiro avaliados em dois sistemas alimentares

Abstract

Ao início do período experimental e a cada 20 dias, as seguintes mensurações foram realizadas: peso corporal, altura do anterior, altura do posterior, comprimento corporal, perímetro torácico e condição corporal. Ainda obteve-se a estrutura corporal (frame size index) por meio da fórmula [FSI = (altura do anterior + altura do posterior + comprimento corporal + peso corporal)/4], e a compacidade (compacidade = peso corporal/comprimento corporal). Ao término do período experimental foram abatidos oito animais, quatro por tratamento, para avaliações das características da carcaça (componentes corporais e regionais), das perdas por resfriamento, bem como dos rendimentos de carcaça propriamente dito, comercial, frigorífico e na fazenda. Os dados foram submetidos à análise de variância e as médias comparadas pelo teste F ou pelo teste não paramétrico Wilcoxon-Mann-Whitney (P<0,05). Cordeiros cruza Corriedale de ambos sistemas apresentaram crescimento e desenvolvimento semelhantes, não diferindo estatisticamente (P>0,05). Entretanto, aqueles mantidos com as mães no campo nativo diferido apresentaram melhor desempenho produtivo, com maiores ganhos totais em peso, condição corporal, perímetro torácico e compacidade. Nas avaliações pós abate, maior peso de carcaça quente e fria e melhor rendimento comercial e de frigorífico, além de carcaças mais compridas, com maior profundidade e proporção de perna, também foi verificado nos cordeiros mantidos com as mães em campo nativo, diferindo significativamente (P<0,05) daqueles mantidos em pastagem de azevém anual, que somente apresentaram maior percentual de vísceras verdes.Palavras-chave: azevém, campo nativo, Corriedale, frame size index, terminação. PERFORMANCE AND CARCASS QUALITY OF LAMBS EVALUATED IN TWO FEEDING SYSTEMSABSTRACT: The objective of this study was to evaluate the productive performance and carcass quality of Corriedale crossbred lambs (n=28) in two feeding systems during finishing: a) weaned and grazing on annual ryegrass (Lolium multiflorum Lam.) in late season; b) maintained with their mothers and grazing on May-deferred native pasture. The following measurements were made at the beginning of the experimental period and at intervals of 20 days: body weight, front height, rear height, body length, chest circumference, and body condition. Additionally, body structure was evaluated by the frame size index [FSI = (front height + rear height + body length + body weight)/4], and compactness as body weight/body length. Eight animals were slaughtered at the end of the experimental period, four per treatment, for the evaluation of carcass traits (body and regional components), cooking loss, and carcass yields (commercial, slaughter, and farm).

In vivo biometry and carcass characteristics of lambs in different finishing systems
