ABSTRACT. The objective of this research was to study the factors that influence the test day milk yield (TDMY) and percentages of protein, fat, lactose, and total dry extract obtained on test day. We evaluated 110,732 weekly milk production records from 1496 goats and 19,271 monthly milk constituent records from 1245 Alpine and Saanen goats, which were collected from 1997 to 2010 in the goat sector at Universidade Federal de Viçosa. To ensure greater record reliability, only lactation data with kidding order between 1 to 6, type of kidding data including 0 to 3 kids, milk control years after 1997, and genetic groupings other than types 7 or 9 were considered, due to the relative lack of information recorded for some classes of these factors. Data in which the reported milk days were less than 7 or greater than 315 were also eliminated. Goats aged greater than 300 days at calving and those aged less than 6 years at control were considered in this study. Milk production was higher in the dry season in comparison to the rainy season. Genetic grouping did not influence all traits in both breedings. The TDMY tended to increase along with increasing age of the goats at kidding, while the opposite trend was observed relative to Factors that influence the test day milk yield and composition kidding order. Factors that significantly influenced all of the studied traits varied, and the factors that significantly influenced each trait were altered between the relationship of Alpine and Saanen breeds. Thus, the analysis of factors that influence traits to be evaluated in the herd under study is critical for defining the best evaluation model.

ResumoO objetivo do presente trabalho foi determinar as características físico-químicas e celulares em 103 amostras de leite provenientes das cabras Saanen, Alpina e Toggenburg, em lactação, realizando-se, para tanto, a contagem eletrônica e microscópica de células somáticas, e a mensuração dos teores de gordura, proteína, lactose e sólidos totais. Os valores medianos da contagem celular eletrônica e microscópica foram de 406.000 e 142.840 células/mL de leite, respectivamente. Comparando-se as raças, verificou-se que a Toggenburg apresentou uma maior contagem celular automática (556.000 céls/mL), quando comparada às raças Saanen (152.000 céls/mL) e Alpina (218.000 céls/mL). Não houve diferença na contagem microscópica entre as raças. Os valores medianos de proteína (2,98; 3,10 e 3,02 g/dL) e sólidos totais (10,91; 11,41 e 11,22 g/dL) não apresentaram diferenças entre as raças Saanen, Alpina e Toggenburg, respectivamente. O valor mediano de gordura obtido para raça Saanen (2,35 g/ dL) foi menor que da Toggenburg (3,13 g/dL); em contrapartida, o teor de lactose foi menor na raça Toggenburg (4,06 g/dL). Os parâmetros físico-químicos sofreram variações de acordo com as raças estudadas, verificadas pela menor concentração de gordura em cabras Saanen; maior celularidade e menor teor de lactose em cabras Toggenburg.Palavras-chave: caprinos, componentes, contagem de células somáticas, qualidade. AbstractThe objective of this study was to determine the physicochemical and cellular characteristics in 103 milk samples from goats Saanen, Alpine and Toggenburg, lactating, performing the electronic and microscopic somatic cells count, and measurement of fat, protein, lactose and total solids levels. The median values of the electronic and microscopic counts were respectively 406,000 and 142,840 cells/ml of milk. Comparing the breeds, it was found that the Toggenburg had a higher automatic cell count (556,000 cells/mL) compared to Saanen (152,000 cells/mL) and Alpine (218,000 cells/mL). There was no difference in the microscopic count between breeds. Median values of protein (2.98, 3.10 and 3.02 g/dL) and total solids (10.91; 11.41 and 11.22 g/dL) did not differ between Saanen, Alpine and Toggenburg, respectively. The median value obtained for fat from Saanen (2.35 g/dL) was lower than the Toggenburg (3.13 g/dL), in contrast, the lactose content was lower in the Toggenburg breed (4.06 g/dL). RESUMO -Tendo em vista a importância da qualidade do leite de cabra para a sua comercialização, o presente trabalho teve por objetivo avaliar as características físico-químicas do leite caprino na época seca e chuvosa na microrregião de Mossoró-RN. Para isto, foram coletadas amostras de 17 produtores durante 30 semanas. As amostras após coletadas foram transportadas, em caixas isotérmicas, para o Laboratório de Tecnologia de Alimentos da UFERSA, onde foram analisadas em duplicatas quanto aos seguintes parâmetros físico-químicos: acidez titulável, sólidos totais, proteína, sólidos não gordurosos, gordura, densidade e índice crioscópico. Verificou-se que as características físico-químicas do leite caprino avaliado na microrregião de Mossoró-RN sofreram alteração conforme a época chuvosa e seca do ano. O período chuvoso ou seco dependendo da semana de análise influenciou acidez titulável, proteína, gordura, sólidos totais e sólidos não gordurosos. A densidade e índice crioscópico não sofreram alteração com o período chuvoso e seco do ano. No período chuvoso a acidez titulável, proteína, sólidos totais, SNG e gordura foram superiores aos do período seco. O teor de proteína, densidade e SNG ficaram abaixo do mínimo estabelecido pela legislação brasileira.Palavras-Chave: acidez titulável; gordura; densidade; índice crioscópico.ABSTRACT -Considering the importance of milk quality for their marketing, this study aimed to evaluate the physico-chemical properties of goat milk in nature produced in the region of Mossoró-RN. For this, samples were collected from 17 producers for 30 weeks. The samples were collected and transported in isothermal boxes for the Food Technology Laboratory of the UFERSA, where duplicates were performed on the following physicchemical parameters: titratable acidity, total solids protein, nonfat solids, fat, density and cryoscopic index. There was a significant interaction between factors period (wet and dry) and analysis time (weeks) for characteristics: acidity, protein, fat, total solids and solids not fat. There was isolated effect of time of analysis for density and cryoscopyc index. In the rainy season, the acidity, protein, total solids, SNF and fat were higher than in the dry period. The acidity within the period respected the Brazilian legislation. In the dry season, the lowest acidity of milk was observed in the tenth week. At first and ninth weeks of dry and rainy seasons, respectively, the protein content was below the minimum established by Brazilian legislation. Regardless of the week and period, the goat milk's no fat solids were below the minimum value established by Brazilian legislation. Whereas fat varied by week of collection. Bulk density decreased with milk collection year, and remained below the minimum established by Brazilian legislation. During the rainy season, there was predominance of the cryoscopic index values superior to Brazilians legislation.
