ABSTRACT. The objective was to evaluate the effect of propolis-based products (PBP) on performance, digestibility, microbial production and carcass characteristics of feedlot young bulls. Twenty-seven crossbred young bulls were used, with 353 ± 28 kg of body weight in a completely randomized experimental design, divided in three treatments: two diets with PBP with different dosages (PBP1= 0.018 mg g -1 and PBP2= 0.036 mg g -1 of total flavonoids in chrysin) and control diet (CON). To determine total digestibility, the indigestible dry matter was used as an internal marker, while microbial production was estimated from purine derivatives in urine, collected by the spot method. The evaluated carcass characteristics were: hot carcass weight, dressing percentage, conformation, Longissimus muscle area, fat thickness, colour, texture, marbling, pH, cushion thickness and percentages of muscle, bone and fat. The studied variables were subjected to analysis of variance with 5% probability. The addition of propolis had no effect on DM and nutrients digestibility (except the ADF, which was higher) or efficiency of microbial synthesis. Carcass characteristics were not affected by the experimental treatments. The PBP in the used dosages should be reviewed and higher dosages should be tested.Keywords: additive, flavonoids, meat quality, microbial efficiency, ruminant.Desempenho, digestibilidade, produção microbiana e características de carcaça de bovinos confinados que receberam dietas contendo própolis RESUMO. Objetivou-se avaliar o efeito de produtos à base de própolis (PBP) sobre o desempenho, digestibilidade, produção microbiana e características de carcaça de bovinos confinados. Foram utilizados 27 bovinos com 353 ± 28 kg de peso corporal em um delineamento inteiramente casualizado dividido em três tratamentos: duas dietas contendo PBP em diferentes dosagens (PBP1 = 0.018 mg g -1 e PBP2 = 0.036 mg g -1 de flavonoides totais em crisina) e dieta controle (CON) sem adição de própolis. Para a determinação da digestibilidade total, a matéria seca indigestível foi usada como marcador interno, enquanto a produção microbiana foi estimada pelos derivados de purina na urina, coletadas pelo método spot. As características de carcaça avaliadas foram: peso de carcaça quente, rendimento de carcaça quente, conformação, área de olho de lombo, espessura de gordura, coloração, textura, marmoreio, pH, espessura de coxão e percentagens de músculo, osso e gordura. As variáveis estudadas foram submetidas à análise de variância com 5% de probabilidade. A adição da própolis não teve efeito sobre a digestibilidade da MS e nutrientes (exceto para FDA, que foi maior) e eficiência de síntese microbiana. As características de carcaça não foram afetadas pelos tratamentos experimentais. As dosagens utilizadas nos PBP devem ser revistas e dosagens mais elevadas devem ser testadas.Palavras-chave: aditivo, flavonoides, qualidade de carne, eficiência de síntese microbiana, ruminante.

RESUMO -O objetivo deste experimento foi avaliar, durante a fase de crescimento, o consumo alimentar, ganho de peso e a conversão alimentar de machos inteiros ou castrados, aos oito meses, de dois sistemas de acasalamento, puros (Charolês -C e Nelore -N) e cruzados ( 1 / 2 CN e 1 / 2 NC), bem como medir a heterose resultante. Os animais foram confinados dos nove aos doze meses de idade, sendo todos alimentados com dieta contendo 15% de proteína bruta e uma relação volumoso:concentrado de 70:30. Não houve diferença entre inteiros e castrados para consumo de matéria seca (CMS), em kg/animal/dia (CMSD), CMS por unidade de peso metabólico (CMSM) e CMS por 100 kg de peso vivo (CMSP). Os animais inteiros apresentaram 13,7% a mais de ganho de peso médio diário (GMD) e foram mais eficientes na transformação dos alimentos consumidos em ganho de peso (4,66 contra 4,99 kg de CMS/kg de ganho de peso) que os castrados. O efeito da castração no GMD foi mais pronunciado nos bezerros filhos de touros C (1,00 contra 1,19 kg) que nos filhos de touros N (0,91 contra 0,97 kg). Os animais F1 apresentaram maior GMD que a média dos puros, resultando em heterose de 9,28%. Os bezerros C apresentaram maior CMSD e GMD que os N. No entanto, CMSM e CMSP foram similares entre os dois grupos puros. Os animais 1 / 2 CN e 1 / 2 NC não apresentaram diferença frente às variáveis estudadas. Os bezerros filhos de touros C foram mais eficientes que os filhos de N na transformação dos alimentos consumidos em ganho de peso.Palavras-chave: castração, Charolês, confinamento, cruzamento, heterose, Nelore Performance during the Growth Phase of Bulls or Steers from Different Genetic GroupsABSTRACT -The objective of the experiment was to evaluate, during the growth phase, the dry matter intake, weight gain and feed to gain conversion of young bulls and steers, castrated at eight month, from two breeding systems, straightbred (Charolais -C and Nellore -N) and crossbred ( 1 / 2 CN, 1 / 2 NC), as well as to measure the resulting heterosis. The animals were confined from nine to twelve months and fed a 15% crude protein diet and a 70:30 forage to concentrate ratio. There was no difference between bulls and steers for dry matter intake (DMI) in kg/animal.day (DMID), DMI per unit of metabolic weight (DMIM) and DMI per 100 kg of live weight (DMIP). The bulls showed a 13,7% higher average daily weight gain (ADG) and were more efficient in the feed to gain conversion (4.66 vs 4.99 kg of DMI/kg of gain) than the steers. The effect of castration on the weight gain was more pronounced in calves sired by C bulls (1.00 vs 1.19 kg) than in calves sired by N bulls (.91 vs .97 kg). The F1 animals showed higher ADG than the average of the straightbreds, resulting in 9.28% heterosis. The C calves presented higher DMID and ADG than the N. Carcass boneless yield of Braford steers, classified according to fat coverage class

-The objective of this study was to evaluate total and individual meat yield of boneless cuts, retail cuts, descarded trimmings and carcass bones of 38 Braford castrated steers, slaughtered at 22 months of age after feedlot finishing.Carcasses were classified in three ranks according to fat coverage: even fat coverage over the carcass, with fat thickness of approximately 6-8 mm on the 12 th rib; animals with uneven fat cover, with fat thickness of 3-5 mm and steers with insufficient fat coverage over the carcass, with fat thickness of 1-2 mm. Shrinkage losses decreased as fat coverage increased, and it was 2.57, 2.22, and 1.96%, respectively, for insufficient, uneven, and even fat coverage whereas flank yield increased, reaching values of 13.04, 13.47 and 14.36%. Boneless yield was the highest in carcasses with insufficient fat coverage (78.70%) when compared to even fat coverage (77.62%), which is a result of the lowest trimming percentage, which increased according to coverage fat (4.40; 5.14 and 6.01%, respectively for carcass with insufficient fat coverage, uneven fat coverage and even fat coverage). Back rib and short rib yields were the greatest in carcasses with the largest fat thickness, whereas percentage of silverside and topside were the greatest in carcass with insufficient fat coverage compared to the ones with even fat coverage. Braford castrated steers can be slaughtered with the smallest fat coverage because the low fat coverage does not affect negatively yield of secondary cuts. Increase in coverage fat reduces shrinkage losses mainly in cuts submitted to little fat trimming.
