“…Inter-individual variation is evident in both the extent of absorption and rate of clearance of the dose with maximal plasma concentrations in the range of 40 ± 220 ngaml being observed at 7 h in two subjects (Figure 1). The kinetics of quercetin absorption following rutin dosing are similar to those previously reported by Hollman et al (1997b). Clearance is not complete in 24 h and so the possibility exists that signi®cant accumulation might occur in the blood after repeated daily supplementation.…”

“…For ease of analysis, plasma quercetin was measured in acid-hydrolysed samples as a marker of rutin absorption (Hollman et al, 1996c). The effects of glycosylation on quercetin absorption have been studied for quercetin, quercetin glucosides and quercetin-3-rutinoside and uptakes of 24%, 52% and 17% respectively reported (Hollman et al, , 1997b. Signi®cantly elevated plasma concentrations of quercetin were found in all three volunteers following dosing with rutin ( Figure 1).…”

“…The difference in absorption rate was attributed to glycosylation in quercetin metabolism. Previous studies have revealed that onions contain an abundant amount of flavonol glycosides as quercetin derivatives (9,17). Flavonoids have been used as a diuretic agent and anti-inflammatory in folk medicine and certain flavonoid-rich types of onion exhibit anticancer properties (18)(19)(20).…”

“…In Asian countries, for example, the ingestion of isoflavonoids reaches, in some cases, 28 mg daily (Fukutabe et al, 1996;Nakamura et al, 2000). The plasma concentration after ingestion of these substances is relatively high (Franke et al, 1998;Watanabe et al, 1998) and can persist for 2 days, suggesting that by repeated inclusion of certain foods in the diet, these substances could accumulate in plasma (Hollman et al, 1997;De Vries et al, 1998).…”
