Avaliação Das Perdas De Frutas E Hortaliças No Mercado Varejista De Mineiros-Go: Um Estudo De Caso

“…According to Tofanelli et al (2009a), physiological losses can be reduced not only by the adoption of appropriate storage techniques, such as refrigeration and/or modified atmosphere, but principally by adequate planning of the quantity of fruits offered, taking into account the seasonal market variations in demand during and between months.…”

“…As noted by Calbo (2006), this serves as the "gateway" to microorganisms, such as bacteria, which are the major causes of potato rot. Tofanelli et al (2009a), as perdas fisiológicas podem ser reduzidas não apenas pela adoção de técnicas de armazenamento, como a refrigeração e/ou atmosfera modificada, mas, principalmente, pelo adequado planejamento da quantidade ofertada, com atenção às diretrizes de sazonalidade de mercado, ao decorrer de cada mês.…”

“…The following decreasing order of losses was obtained: papaya (17.90%) > avocado (16.55%) > guava (13.82%) > grape (9.80%) > passion fruit (8.90%) > mango (7.80%) > banana (7.60%) > watermelon (5.20%) > pineapple (5.08%) > apple (5.00%) > melon (4.20%). Among the relative losses of climacteric fruits, the values obtained for papaya (17.90%), avocado (16.55%), and guava (13.82%), according to the classification proposed by Tofanelli et al (2009), were classified as high losses. However, these fruits are not included among the greatest volumes offered, probably because they have certain morpho-physiological traits, such as high-water content, high respiratory rate, and also thin epidermis.…”

“…VV represents the mean quantity of fruit and vegetables sold per week (kg week -1 ). These relative losses were classified as low (less than or equal to 5%), medium (between 5.1 and 10.0%), and high (greater than or equal to 10.01%), as proposed by Tofanelli et al (2009). Estimates of relative losses of all fruits and vegetables marketed allowed to estimate total losses, in kilograms, on the volume offered per week.…”

“…In this linkage, a differentiated model was generated through this understanding, which consisted of three public front: the Brazilian food company (COBAL), Brazilian storage company (CIBRAZEM), and the production financing company (CFP). In the organizational process, these types of programs allowed for greater proximity to European models, because they established several commercial cultural projects in the same space, rather than just food, and the process followed the mixed (public and private) model of fiscal management (TOFANELLI et al, 2009). From these advances it was possible to conceive of the elements required, to create a fundamental bases for the creation of the CEASA, from which measures and improvements; could be generated from a central perspective; these mainly consisted a union between the public and the private sector.…”
