This work was carried out to evaluate the animal performance, carcass characteristics and meat quality of crossbred heifers slaughtered at three different body weights. The heifers were slaughtered with 330 (Light), 360 (Medium) and 400 (Heavy) kg body weight. The final weight, average daily gain and carcass weight were greater for HEA heifers, intermediate for MED heifers and lower for LIG heifers. However, carcass dressing and pH were similar for the three heifers groups. Dripping loss, dissection loss and the muscle, fat and bone percentages on the 6th rib did not alter by slaughter weight. Slaughter weight did not affect the colour, shear force and lipid oxidation of meat. In conclusion, heavy heifers finished in pasture and that were concentrate-supplemented had better animal performance; however, the carcass characteristics and meat quality were similar for the three heifers groups.Peso de abate não alterou as características de carcaça e qualidade da carne de novilhas mestiças terminadas a pasto com suplementação RESUMO. Este trabalho foi realizado para avaliar o desempenho animal e características da carcaça e da carne de novilhas mestiças abatidas com três diferentes pesos vivos. As novilhas foram abatidas com 330 kg (LEV), 360 kg (MED) e 400 kg (PES). O peso vivo final, ganho médio diário e peso de carcaça foram superiores para as novilhas PES, intermediário para as novilhas MED e inferiores para as novilhas LEV. No entanto, o rendimento de carcaça e pH foram semelhantes para os três grupos de animais. As perdas por gotejamento, dissecação e as percentagens de músculo, gordura e ossos na 6ª costela não foram alteradas pelos três pesos de abate. Da mesma forma, o peso de abate não teve efeito sobre a coloração, força de cisalhamento e oxidação lipídica da carne. Em conclusão, novilhas mais pesadas terminadas em pastagem e suplementadas com concentrado apresentaram melhor desempeno animal; todavia, as características de carcaça e qualidade da carne não foram alteradas.Palavras-chave: análise instrumental, peso de abate, novilhas, qualidade da carne.

The addition of 0; 5; 10 and 15% cassava bagasse, based on the dry matter of the total diet of crossbred Holstein v. Zebu cows, was evaluated on milk production and composition and on the impacts of diet costs. The animals, weighing an average of 478.5 kg, were in the middle third lactation period. Diet with 15% cassava bagasse provided a 13.2% increase in production when compared to control. Feed conversion had a quadratic effect with minimum point at 4.2% of cassava bagasse inclusion. Crude protein, the only milk component that changed, increased linearly with the inclusion of cassava bagasse levels. Treatment with 15% cassava bagasse caused a more effective operational cost (42.8% higher when compared to control) and the highest leveling point for milk production and price. The lowest leveling points were treatments with 5 and 10% inclusion of cassava bagasse, which had the best economic results. Concentrates caused cost increase, particularly when roughage : concentrate ratio decreased due to higher cassava bagasse inclusion levels.Produção de leite e avaliação econômica da utilização de bagaço de mandioca na alimentação de vacas leiteiras RESUMO. Estudou-se o efeito da inclusão de 0; 5; 10 e 15% de bagaço de mandioca, com base na matéria seca da dieta total de vacas mestiças Holandesas vs. Zebu, sobre a produção e composição do leite e sobre os impactos no custo da alimentação. Os animais estavam no terço médio de lactação e pesavam em média 478,5 kg. A dieta com 15% de bagaço de mandioca acrescentou 13,2% à produção, comparada à dieta controle. A conversão alimentar apresentou efeito quadrático com ponto mínimo em 4,2% de inclusão de bagaço de mandioca. A proteína bruta, único componente do leite que sofreu alteração, aumentou linearmente com os níveis de inclusão de bagaço de mandioca. O tratamento com 15% de bagaço de mandioca representou maior custo operacional efetivo (42,8% mais elevado em relação ao tratamento controle) e o maior ponto de nivelamento para a produção e preço do leite. Observaram-se os menores pontos de nivelamento para os tratamentos com 5 e 10% de inclusão de bagaço de mandioca, os quais apresentaram melhores resultados econômicos. O concentrado foi o principal responsável pela elevação dos custos, particularmente, quando ocorre a redução da razão volumoso : concentrado em função dos maiores teores de inclusão de bagaço de mandioca.Palavras-chave: composição do leite, conversão alimentar, custo, leite de vaca, receita.

RESUMO -Objetivou-se avaliar o crescimento de novilhas de diferentes grupos genéticos no sistema de produção superprecoce. Utilizaram-se 132 novilhas dos seguintes grupos genéticos: 18 ¾ Canchim × ¼ Nelore (¾ CN); 18 ½ Canchim × ½ Nelore (½ CN); 24 Simbrasil -⅝ Simental × ⅜ Nelore; e 72 Three-cross ¼ Simental × ¼ Nelore × ½ Angus. As novilhas foram desmamadas aos 210 dias de idade, com 247,4 ± 16,5 kg de peso vivo (PV), mantidas em creep-feeding durante a fase de cria e confinadas por 132 ± 14 dias até atingirem 350 kg PV e 5 mm de gordura subcutânea, quando, então, foram abatidas. Os grupos genéticos não influenciaram o ganho de peso médio diário, porém a espessura de gordura subcutânea do dorso (EGS) e da garupa (EGG) foi maior nos animais Three-cross, que apresentaram os maiores valores iniciais (1,07 kg/dia). Não houve diferença na área de olho-de-lombo (AOL) inicial, porém a os animais Three-cross apresentaram os maiores valores iniciais. Nos animais do grupo Three-cross, a área de olho-de-lombo (AOL) final e ajustada para 100 kg de peso vivo (PV) foi inferior à observada nos demais grupos, porém o peso final foi superior ao do grupo Simbrasil, com tempo intermediário de confinamento. Ajustando-se os valores de AOL e EGG para o menor número de dias de confinamento (114 dias), animais Simbrasil apresentam maior valor de AOL final e os animais Three-cross e Simbrasil, maior EGG final.Palavras-chave: área de olho-de-lombo, espessura de gordura da garupa, espessura de gordura subcutânea, ultrassom Muscular and adipose tissue growth of young heifers from different genetic groups in the intensive biological model ABSTRACT -The objective of this study was to evaluate the growth of young heifers from different genetic groups in an intensive meat production system. One hundred and thirty two heifers from four different genetics groups were used:and 72 -Three way cross ¼ Simmental × ¼ Nellore × ½ Angus. The heifers were weaned at 210 days of age with 247.4 ± 16.5 kg live weight (LW), from creep-feeding during the rearing phase and 132 ± 14 days in feedlot system. The animals were slaughtered when they reached 350 kg LW and 5 mm backfat thickness (BFT). There was no difference among the genetic groups for average daily weight gain but the three way cross heifers presented the highest values (1.07 kg/day). There were no differences for initial ribeye area (REA), but the three cross animals obtained larger values of initial backfat thickness (BFT) and initial rump fat thickness (RFT). In the animals in the three -cross group, the final ribeye area and adjusted to 100 kg live weight (LW) was lower than that observed in the other groups, but the final body weight was superior to the Simbrasil group, with intermediate feedlot time.
