The properties of ascorbic acid and ascorbyl palmitate were in accordance with earlier reports, which also observed radical scavenging activity and reducing properties of ascorbic acid and ascorbyl palmitate [19]. Moreover, the significant difference between ascorbyl palmitate and ascorbyl CLA might indicate that the degree of saturation and perhaps the chain length of the fatty acid had an impact on the reducing power.…”
