The purpose of this study was to determine goat milk physicochemical parameters during the feed scarcity season. An evaluation was made for 398 milk samples from 80 multiparous goats belonging to three different production systems: (S1) mechanized milking grazing pasture and harvested residue (alfalfa) and grain supplemented; (S2) system grazing native pasture; and (S3) system grazing native pasture and grain supplemented. The general averages were: fat (FT) 4.0 ± 0.20%, protein (PR) 3.3 ± 0.05%, lactose (LC) 4.9 ± 0.09%, nonfat solids (NFS) 8.9 ± 0.13%, total solids (TS) 14.5 ± 0.20%, temperature (TM) 24.6 ± 1.06°C, and acidity (pH) 6.7 ± 0.049. Most of the physicochemical components of milk were affected (p < 0.0001) by the production system × month interaction and production system × group × month interaction. The FT content was higher (p < 0.05) in S2 (4.56 ± 0.18) than in S1 (3.64 ± 0.20) and S3 (3.50 ± 0.20). LC differed (p < 0.05) in S2 (5.07 ± 0.08) than in S1 (4.77 ± 0.09) and S3 (4.70 ± 0.09). No differences were observed for the rest of the variables (p < 0.05) among the production systems. The study unveiled a higher content of FT, LC, NFS, PR, and TS for S2 than for S1 and S3. This higher content may be explained because S2 only grazed on herbs and shrubs, in contrast to S1 and S3 which were additionally supplemented with grain concentrates.

This research was carried out to investigate key physicochemical parameters of milk samples collected from camel, cow and goat in Jigjiga district, Eastern Ethiopia. Sixty fresh milk samples were collected purposively from camels, cows and goats (twenty samples from each species) and analyzed. The results revealed that, cow milk had 6.30 ± 0.15 pH, 0.29 ± 0.04% titratable acidity, 14.6 ± 0.60% total solid, 0.75 ± 0.07% ash, 3.54 ± 0.12% protein, 5.54 ± 0.65% fat and 1.06 ± 0.03 specific gravity. Camel milk had 6.13 ± 0.11 pH, 0.36 ± 0.01% titratable acid, 13.65 ± 1.39% total solid, 0.73 ± 0.03% ash, 3.15 ± 0.15% protein, 3.93 ± 0.15% fat, and 1.03 ± 0.00 specific gravity. Results for goat milk was also recorded as 6.38 ± 0.08 pH, 0.33 ± 0.03% titratable acidity, 14.25 ± 1.16% total solid, 0.73 ± 0.07% ash, 4.62 ± 0.56% protein, 6.79 ± 0.38% fat and 1.04 ± 0.00 specific gravity. It can be concluded that goat milk had higher protein and fat content than cow and camel milk.

In recent years, trace elements in cow milk have been considered good bioindicators of pollution in the agricultural environment. The aim of the study was to analyze the correlation between trace element content in livestock drinking water and cow milk from dairy farms located in the southeast of Córdoba province, Argentina. Groundwater is the main source of livestock drinking water. According to the results, trace elements were grouped in three categories: (a) those that were in high concentration in phreatic water and in low concentration in deep wells (As, V); (b) those which showed the opposite trend (Cu, Fe, Mn, Zn); and (c) those that were in very low concentrations in all water samples (Cd, Cr, Ni, Pb, and Se). In elements from group (a), a positive correlation between As content in water and in milk was observed. For elements included in group (b), it was observed a higher concentration in milk samples from farms that use deep wells, related with their higher concentrations in water. Cr, Ni, Pb, and Se milk contents are within the ranges reported in other areas. Soil and forage trace element content may contribute to their presence in milk. Since information about transference of trace elements from environmental matrices to milk is very scarce, at national and international levels, further studies are necessary, including speciation in milk and dairy products, to guarantee food safety.
