This study aimed to assess the influence of lamb finishing systems on zootechnical performance, as well as on carcass and meat quality. The experiment was conducted at the APTA’s experimental farm. Thirty-three lambs were used – both sexes, initial age of 90 ± 3 days, Texel with Santa Inês, each animal being one experimental unit, with 6 males and 5 females per treatment. Treatments consisted of: lambs finished on pasture, in semi-feedlot or in feedlot. The lambs were slaughtered with average live weight of 35 kg. Weight gain and carcass measures were taken by ultrasound. After slaughter, carcass conformation and yield, pH, temperature, color, water retention capacity and tenderness were measured. Animals finished on pasture had lower weight gain, were slaughtered at an older age, with lighter carcass weight, smaller loin area, lower shank compactness index, besides lighter shoulder and shank weights, compared to the other production systems (p < 0.05). There was no difference between the semi-feedlot and the feedlot systems for the assessed characteristics. In conclusion, production systems affect animal performance, as well as carcass and meat quality, especially when it comes to important production aspects, such as slaughter age and yield of premium cuts.

Quantitative and qualitative carcass characteristics of feedlot ewes subjected to increasing levels of concentrate in the diet [ ABSTRACTThe aim of this study was to evaluate the effect of increasing levels of concentrate on the quantitative and qualitative carcass characteristics of feedlot ewes. Twenty-four crossbred ewes were randomly distributed in four treatments: (1) diet with 20%; (2) 40%; (3) 60%; and (4) 80% of concentrate. Animals were slaughtered when those receiving the diet with 80% of concentrate reached adult weight, at around 50kg LW. The data were analyzed by means of variance and regression analyses and correlations. The levels of concentrate increased live weight at slaughter linearly. Height at the withers and rump presented medium to high correlation (0.86). The correlation of loin eye area measured on the carcass and by ultrasound examination was 0.81, whereas for back fat thickness it was 0.85. The increase in the use of concentrate in the diets promotes heavier carcasses with better yields and fat cover. Some measures obtained in vivo presented high correlation with those measured on the carcass. The use of ultrasound can be a way to predict the in vivo loin eye area. The use of concentrate improves the meat quality in variables' color and appearance.

The objective of this study was to evaluate the effects of combinations of dry and moist corn and sorghum grain on the carcass and cut characteristics of crossbred lambs Suffolk x Santa Inês produced in feedlots. The experimental design was a randomized block with four treatments and three replicates. Sixty uncastrated male lambs with an initial average weight of 15.5 kg were used in this experiment. Four combinations of grain were evaluated: dry sorghum milled + silage of high-moisture sorghum grain (DS: MS); dry corn milled + silage of high-moisture sorghum grain (DC:MS); dry corn milled + silage of high-moisture corn grain (DC:MC); dry sorghum milled + silage of high-moisture corn grain (DS:MC). There was no difference between treatments for carcass yield, warm and cold carcass weight and for cooling loss. The slaughtering weights of lambs fed DC:MS associations were higher (29.46 kg) than lambs fed DC: MC (24.17 kg), but both did not differ DS:MS (26.18 kg) and DS:MC (25.21 kg). There was influence of the grain associations on the yield of commercial cuts palette and shank. Combinations of corn and sorghum grain, dried and ensiled, can be used to feed lambs in confinement for meat production without affecting the quality of the carcass.
