Effects of herbal yogurt with fish collagen on bioactive peptides with angiotensin-I converting enzyme inhibitory activity

Abstract: Illicium verum (IV; dried fruit), Psidium guajava (PG; dried leaves), and Curcuma longa (CL; dried rhizome) water extract and/or fish collagen were added into yogurt to determine their effects on acidification and the proteolysis of milk up to 21 days of storage at 4°C. The angiotensin-I converting enzyme (ACE) test was conducted to analyze the inhibitory activity of bioactive peptides produced during proteolytic activity on the ACE enzyme. The addition of fish collagen in PG-yogurt significantly decreased pH … Show more

“…Probiotics have been researched extensively for their health benefits. The Food and Agriculture Organization and the World Health Organization define probiotics as "live microorganisms which when ingested in enough amounts improve the health of the host (Hill et al, 2014;Shori et al, 2020). Efficacious probiotics must-have essential properties as follows: strong stability under storage and distribution conditions, must be non-pathogenic, non-toxic, sustainable in the host body, effective adhesion, resistant to low pH and bile salts in the gut, and should have good activity with beneficial effects on the host (e.g., improved immunity; Shori, 2021;Zendeboodi et al, 2020).…”

“…Sensory evaluation was done on the first day of storage as described by Shori et al (2021c). The 13-member untrained panel of students and staff members of biological sciences, faculty of science, King Abdulaziz University with ages ranging between 20-40 years evaluated the labneh.…”

“…Must be noted, that including bifidobacteria enhances the therapeutic value of foods (in particular yogurt). But the survival of bifidobacteria in foods is dependent on varying food matrices, like the time, pH and temperature of incubation and storage, ratio and strains in the inoculum, availability of nutrients, presence of undesirable microflora and their enzymes, the presence of hydrogen peroxide and dissolved oxygen, the concentration of metabolites (Shori et al, 2020;Shori, 2021). So, the control of the manufacture yogurt process is very important to get a quality product.…”
