“…A review on the characteristics of yacon as a functional food (Delgado et al, 2013) states that yacon leaves contain several phenolic compounds that enhance growth of intestinal bacteria with good metabolic properties, inhibiting the attack of pathogens. Hydro-ethanolic crude extracts (400 mg/kg) of yacon leaves given orally to diabetic Wistar rats for 3, 7, 10 and 14 days were shown to significantly decrease fasting and post-prandial serum glucose (Baroni et al, 2008).
