The release of hydrophobic groups during the enzymatic catalysis is related to the bitterness produced in the hydrolysate protein source. The activated charcoal, by its adsorption capacity, can be effective in removing the compounds responsible for this undesirable taste. Thus, the present study aimed to reduce the bitterness of the hydrolysate, as well as evaluating sensory formulations produced from this material. The hydrolysate of soybean meal was produced using the Alcalase ® 2.4L and it was submitted to the adsorption process with activated charcoal. It was subsequently used in the preparation of formulations for evaluating the acceptability of the product. The results obtained in the sensory tests indicate that the treatment of the hydrolysate with activated charcoal modifies the sensory characteristics of the formulation, allowing the use of this hydrolysate in the formulation of food for human consumption.

RESUMOA liberação de grupamentos hidrofóbicos no decorrer da catálise enzimática está relacionada ao amargor produzido nos hidrolisados de fonte proteicas. O carvão ativado, por sua capacidade de adsorção, pode ser eficiente na remoção de compostos responsáveis por esse gosto indesejado. Diante disso, o presente trabalho teve como principal objetivo reduzir o amargor do hidrolisado, bem como avaliar sensorialmente formulações produzidas a partir deste material. O hidrolisado de farelo de soja foi produzido empregando-se a Alcalase® 2.4L e submetido ao processo de adsorção com carvão ativado. Posteriormente, foi utilizado na preparação de formulações para avaliar a aceitabilidade do produto. Os resultados obtidos nos testes sensoriais indicaram que o tratamento do hidrolisado com carvão ativado modifica as características sensoriais da formulação, possibilitando a utilização deste hidrolisado na formulação de alimentos destinados ao consumo humano.Palavras-chave: proteína, hidrólise, gosto.
