Considering that annatto seeds are rich in protein, the present work aimed to evaluate the biological quality of this nutrient in the meal residue originating from annatto seed processing. We determined the general composition, mineral levels, amino acid composition and chemical scores, antinutritional factors, and protein quality using biological assays. The following values were obtained: 11.50% protein, 6.74% moisture, 5.22% ash, 2.22% lipids, 42.19% total carbohydrates and 28.45% fiber. The residue proved to be a food rich in fiber and also a protein source. Antinutritional factors were not detected. The most abundant amino acids were lysine, phenylalanine + tyrosine, leucine and isoleucine. Valine was the most limiting amino acid (chemical score 0.22). The protein quality of the seed residue and the isolated protein showed no significant differences. The biological value was lower than that of the control protein but higher than that found in other vegetables. Among the biochemical analyses, only creatinine level was decreased in the two test groups compared to the control group. Enzyme tests did not indicate liver toxicity. The results showed favorable aspects for the use of annatto seed residue in the human diet, meriting further research.Keywords: biological value; protein quality; annatto.Practical Application: The evaluation of biological quality of the annatto seeds' protein showed favorable aspects for the use in the human diet.

RESUMO:A norbixina é um carotenóide dicarboxílico hidrofílico presente no pericarpo das sementes do urucuzeiro (Bixa orellana L.). O urucum é comumente utilizado na indústria alimentícia e cosmética como corante natural. O objetivo deste trabalho foi avaliar o processo de reparo cicatricial de feridas cutâneas abertas de ratos tratadas com extrato aquoso de urucum contendo 2,5% de norbixina através de análise histomorfométrica. Para tanto, realizouse feridas cutâneas no dorso de 32 ratos Wistar machos. Estas foram tratadas com extrato de urucum (grupo experimental, n = 16) e solução salina 0,9% (grupo controle, n = 16). Aos 3, 7, 14 e 21 dias após realização do procedimento cirúrgico, os animais foram sacrificados. Os preparados histológicos obtidos foram submetidos à técnica de coloração pela HematoxilinaEosina (H.E.) para contagem de células inflamatórias e de fibroblastos; corados pelo azul de toluidina 1% para contagem dos mastócitos e com picrossirius-red para avaliação das fibras colágenas totais. As imagens histológicas destas lâminas foram capturadas por câmera digital acoplada ao microscópio óptico, sob foco fixo e clareza de campo, obtendo-se 10 campos por lâmina com aumento final de 400X. As fotomicrografias foram avaliadas através do software ImageJ. Os resultados obtidos foram submetidos ao teste t de student sendo o valor de p considerado significativo para p< 0,05. O tratamento tópico com extrato de urucum utilizado aumentou o infiltrado inflamatório durante o 3º, 14º e 21º dia pós-operatório. O grupo tratado apresentou maior densidade vascular quando comparado ao controle a partir do 7º e menor quantidade de fibroblastos até o 14º dia pós-cirúrgico. Conclui-se que o extrato de urucum contendo 2,5% de norbixina não é inócuo aos tecidos cutâneos e possui efeitos pró-inflamatórios e pró-angiogênicos durante o processo de reparo tecidual cutâneo em ratos, interferindo no processo fisiológico de cicatrização. A B S T R A C TWith the knowledge on the hygroscopic equilibrium of the baru (Dipteryx alata Vogel) fruit, the product can be adequately handled to maintain the moisture content at the levels recommended for safe storage. Thus, this paper aimed to determine the water desorption isotherms of baru fruits at temperatures of 20, 25, 30 and 35 °C, and water activity between 0.14 and 0.80, and obtain the values of isosteric heat of desorption as a function of the equilibrium moisture content of the product. The equilibrium moisture content was obtained using the static-gravimetric method. Modified Halsey was the best model recommended to represent the hygroscopicity of baru fruits. The recommended moisture contents for safe storage of baru fruits are not more than 19.9, 19.3, 18.6 and 18.0 (%, d.b.) for the respective temperatures of 20, 25, 30 and 35 °C. The integral isosteric heat of desorption increases as the water content decreases, leading to an increment in the energy required to remove water from the product.Higroscopicidade dos frutos de baru (Dipteryx alata Vogel) R E S U M OCom o conhecimento do equilíbrio higroscópico dos frutos de baru (Dipteryx alata Vogel), pode-se manejar adequadamente o produto visando à manutenção de seu teor de água nos níveis recomendados para o armazenamento seguro. Desta forma, objetivou-se determinar as isotermas de dessorção de água dos frutos de baru nas temperaturas de 20, 25, 30, 35 °C e atividades de água entre 0,14 e 0,80 e obter os valores do calor isostérico de dessorção em função do teor de água de equilíbrio do produto. Para obtenção do teor de água de equilíbrio foi utilizado o método estático-gravimétrico. O modelo de Halsey Modificado foi o melhor modelo recomendado para representar a higroscopicidade dos frutos de baru, cujos teores de água recomendados para o armazenamento seguro dos frutos de baru são de, no máximo, 19,9; 19,3; 18,6 e 18,0 (% b.s), para as respectivas temperaturas de 20, 25, 30 e 35 °C. O calor isostérico integral de dessorção aumenta com a redução do teor de água ocorrendo incremento da energia necessária para a remoção de água do produto.
